Simple Omelette

Now This here is my personal recipe, that I have blogged on my FOODEVA MARSAY Blog, If you haven't already checked it out and followed, please do😉.

A rather easy recipe to follow, and just about any other toppings you can use.  Why not try making this omelette as your next breakfast fix.






Simple Omelette
Servings: 1-2
Difficulty: Easy

INGREDIENTS
2 Extra Large Eggs
2 Mushrooms sliced (button mushroom variety)
2 Tablespoons Chopped Bell Peppers (any colour)
4 Tablespoon Grated Cheddar Cheese
3 Tablespoon Milk
1/4 teaspoon Baking Powder (dissolved in 1 Tablespoon Water OR Milk)
Butter
Salt
Pepper

METHOD
🍳 Crack the eggs into a bowl, add the salt and pepper to season
🍳 Add the Milk to this and whisk well.
🍳 Stir fry the chopped vegetables in a teaspoon or two of Butter and keep aside.
🍳 Now Add the dissolved baking powder to the whisked eggs, and stir in well.
🍳 To a seperate Pan (medium sized non-stick frying pan), melt 1 Tablespoon Butter on medium/low heat, and add the whisked eggs.
🍳Cover the Frying pan with a Lid, allow the eggs to start cooking.
🍳 Remove Lid after 1 minute, or as the eggs begin to “Puff Up”, now gently use a spoon to pull the eggs away from the sides of the pan and gently push any “runny egg mixture” to the edge allowing for those to cook as well.
🍳 Top one side of the cooked eggs with the stir fried vegetables.
🍳 Sprinkle on About 3 Tablespoons cheese and gently fold over, using a flat spoon/spatula, the other end of the eggs, so that it Encloses the fillings.
🍳 Switch off the heat, sprinkle on the rest of the Cheese, and cover the pan with the lid until cheese melts.
🍳 Best Enjoyed HOT, with a sprinkle of Fresh chopped Parsley.

NOTES by FOODEVA MARSAY
🔺 Any size of eggs may be used. Season with salt/pepper according to taste.
🔺 Add chopped cold meats/sausages/any other chopped vegetables, for more variety.
🔺 ALWAYS stir fry the toppings, as this brings them to a warmer temperature and leaves no “cold spots” when digging into an omelette😉
🔺 If you find it difficult to fold over an omelette, try adding the toppings to the center of cooked eggs, then flapping over either sides over toppings.
🔺 Another great way to serve the omelette (this I love to make when I’m in a hurry, has an almost “Pizza Like Omelette”look to it, is set the oven on grill function before staring the stove top preps, when done topping with all the fillings and cheese, simple slot the pan into the oven just until the cheese melts…YUMMMMM
🔺 Egg Whites work just as well with above recipe (MY FAVS😉)
🔺 For a less rushed morning, why not keep the topping ingredients already chopped in your fridge👍

Easy Sponge Cake



Nothing Beats a Simple and delicious Sponge cake....WITHOUT THE FRILLS😋.  This is exactly the type of cake I would reach for at a tea table, and today Aunty Fawzia Safla was kind enough to share her Pic and recipe for a sponge cake.

Sponge Cake

3 eggs
1cup castor sugar 
2tbl oil
1/2 cup milk 
1 tsp vanilla 
1cup flour 
1 tsp Baking powder
Beat egg whites stiff stiff then add castor sugar beat then add yolks an vanilla beat add in milk, oil, flour and Baking powder 
Beat altogether 
* can bake in square pan or loaf pan 
* Bake at 180 degree Celsius

Wasi's Creamy Cheesy Garlic Rolls





There are just some recipes, that never go out of fashion!!! Like this particular one shared on by Waseela 💕. Serve these rolls with Lunch,Dinner or a Braai/Barbecue, it's always a winner. I hope you give this one a try👍🏼


Wasi's Creamy Cheesy Garlic Rolls (Waseela Hossen)

~ 1/2cup basic white sauce seasoned
~ 3-4 Tblsp Lemon Butter Sauce~»heat 3Tblsp Fresh Cream with 1Tblsp butter and 2Tblsp Lemon Juice.
~Mix above together with a drop of yellow colour
~place 6 rolls of choice/1 long twisted roll onto greased casserole
~slice diagonally and add garlic butter between slices
~pour the above prepared sauce over, ensuring your fill some into the slices
~top with grated cheese
~place in oven until warmed through and cheese is melted

**Optional ~ add 3 Tblsp Steers Garlic Sauce to sauce mixture**

Romany Creams

Hmmm...these are almost every South African's favourite Bikes!!!  The perfect combination of Crunchy Coconut teamed with Chocolate, is a sure winner anytime, for me at least.

Aunty Fawzia Safla was very kind to share on her late mum's recipe with us On Watalotwegot, gesture such as these make me Love and Respect all these Lovelies on the group, who so willingly part with their heirloom recipes.

ROMANY CREAMS 
(Recipe kindly shared by Aunty Fawzia Safla) 
1/2 lb butter (250g) 
1/4 cup oil 
1/2 cup maizena 
2 and 1/2 cups coconut 
2 cups flour 
3 tbl cocoa 
1/2 tsp red coloring 
3/4 cup sugar 

Method 
Beat sugar an butter till soft an fluffy add oil then add coconut an dry ingredients make soft dough .Roll out grate top wit fork an cut wit cutter . (Stick together with chocolate ) enjoy ""my late mom's recipe" -Aunty Fawzia Safla"

Butter Rolls

Nothing beats the smell of Freshly Baked Breads, be it Rolls, Buns or Bread...AGREED???

Butter Rolls

1 cup warm water
1 pkg active dry yeast
1/4 cup sugar
1 tsp salt
3 tbls softend butter
1 egg, beaten
3 and 1/2 to 4 cups flour

Method:

~ Put water and yeast in large mixing bowl and add next 4 ingredients. 
~ Beat with dough hook until well blended. 
~ Add 3 1/2 to 4 cups flour and mix until soft dough forms (should not be sticky). 
~ Put out onto floured board and knead a few times until smooth. 
~ Place in greased bowl, cover with plastic wrap and let rise in warm place approx. 45 minutes.     ~ Punch down and turn out onto floured board. Shape into 12 rolls and place in greased 13x9 in. baking pan. 
~ Let rise again about 30 minutes. 
~ Bake at 180C for 20 minutes. 
~ Brush tops of rolls with butter

Garlic Naan




Allow me to Share with you this recipe for Garlic Naan. It's always a winner, warm a little before serving if you make it ahead of time. Perfect with Grills/Curries. This was shared by lovely Zeenath on Watalotwegot years ago, and has a special place in my recipe books, Thank You dearest Zeenie💕 Hope you give this one a try👍.

Garlic Naan or Pitas (Shared by Zeenath of Watalotwegot)
3 cups flour
3 tsp baking powder
Pinch salt
3 tsp ghee/melted butter
1 1/3 cup sour milk/yogurt

Method:
* Combine flour,baking powder,salt and ghee/melted butter in a bowl,rub to make breadcrumbs,
* add enough sour milk/yogurt to make dough.
* divide into small balls, roll and fry on tawa with ghee and garlic butter.

Fruit Cupcakes

Kesigi Moodley

Kes' Fruit cupcakes
110g butter/margarine
1 egg
2.5 tablespoons sugar
1 cup flour
1.5 teaspoons baking powder
1 teaspoon vanilla extract 
1/2 cup milk
125 sultanas or mixed fruit 
Beat together the butter/margarine and sugar. Add the egg and vanilla extract and stir. Gradually add in the flour and baking powder alternating with the milk. Add the fruit. The mixture should be thick dropping consistency. Bake in a preheated oven at 180 degree Celsius for 20-25 minutes until golden brown and cooked through. It should have a crack through it, a must for me in a fruit cake!

Vanilla Cupcakes with Caramel Cream

A Yummy Sweet Treat for Tea Time.  Kindly Shared on by Billy Desai💕

Vanilla cupcakes with Caramel Cream:
2 and half cups flour, 2tblsp baking powder, 2 cups sugar, 2 tsp vanilla essence, 1 cup water, 1 cup oil, 8 egg's separated.
Method: sift flour, baking powder, sugar together, add the oil and water and beat until well combined. Add in vanilla and egg yolks and beat well. In another dish, beat egg whites until stiff peaks, then fold into batter. Fill 2/3 ccupcake cases and in preheated oven at 180degreed until done, takes about 10-15mins. Place on wire rack to cool.

Caramel Cream:
1tin caramel treat, 500ml fresh cream, 2 Tblsp icing sugar, 1tsp maziena. Caramel cream: beat cream until soft peaks form, den add 2Tblsp of icing sugar and 1tsp maziena and beat until stiff( beat about a minute or less after maziena is added or until stiff, bt dnt over beat). Leave in the fridge for 1hour. Then add 1 tin of caramel to the cream and fold it in a few tyms, u want it swirled into the cream. Pipe onto cupcakes. Optional: Spoon a little caramel in the middle of the cream. I filled the cupcakes with a little caramel by filling a syringe wit caramel and inserting frm under the cupcake.

Chapli Kebab Burgers

Chapli Kebab Burgers
Umme Abdullah

1/2 kg chicken mince dry. 
2 tbsp maize meal
1&1/2 tsp half crushed coriander seeds
1tsp anardana powder (dry pomegranate seeds powder) 
1 onion finely chopped(squeezed out water)
6 green chillies crushed
1 tsp crushed red chillies
1 tsp ginger garlic
Salt to taste
1 tomato chopped
1 egg
2 tbsp chopped coriander fresh
1 tsp jeero half crushed
1 tbsp gram flour 
2 tbsp shan Chapli kebab mix. 
Pinch of bicarbonate soda

Method
Grind all ingredients except tomato and onions till all combined well. Add in chopped tomato , onions n 2 tbsp oil. Mix all well n make like burger patty(now freezer suitable). Shallow fry dem on a medium heat ,1-2 at a time. 
Assemble Burgers with onion rings n hot and spicy aamli chutney.( Umme Abdullah)

(Dry mince- I tell my butcher to wash da meat first n den mince it.)

Steak with Butternut and Onion Rings

Fiona Haniff had us all salivating at this dish,  an easy to prepare meal full of Goodness. Thank You for sharing with us Fiona💕

Steak /butternut/onion rings (Shared by Fiona Haniff) 

500g tenderised frying steak. 
Aminas steak and chops spice. 
Worcester sauce. 
1 butternut. 
Onions cut into rings. 
Oil. 

Method. 
Marinate steak in amina spice and add a lil ginger/garlic paste. Heat oil in a pan. Place marinated steak in and cook till done.
add onion rings 2 the steak and cook 4 5min. Steam butternut seperately with salt and butter.
when done add it 2 steak and leave on low heat. Don't stir when u place butternut. Add pepper pwd on top. Garnish wid dhania. And serve. Divine wid garlic bread or roti. 

Tip: Remember the aminas spice has salt. So don't add salt.taste b4 serving. If u require more u can add fine salt.

Mealie Cake

250g Margarine
1 Cup White Sugar
3 Eggs
1 Cup Flour
1/2 Cup Dessicated Coconut
1 teaspoon vanilla essence
3 teaspoons (Heaped) Baking Powder
Pinch of Salt
3 Mealies, cut off the cob and Liquidized with ±1/2 cup Milk

Method:
~Cream Margarine and Sugar until creamy/fluffy
~Add Eggs one at a time and Beat well after each addition.
~Add Vanilla Essence
~followed by sifted Dry Ingredients
~add the coconut, followed by the mealie liquid
~Pour into Tray and bake at 180 degrees Celsius for 45-50 minutes.

Basic cheesecake
for base
1 pkt tennis biscuit crushed
1 slice melted butter mix and press in greased cheesecake pan 

for topping 
1 tub cream cheese
1 tin condensed milk
1 tub fresh cream 
1/4 cup lemon juice
2 tsp vanilla essence
10 g satchet sheridans gelatine mixed in 1/4 cup boiling water  
method
beat  fresh cream in kenwood till till thick add rest of ingredients and beat well   

for mars bar cheesecake add sum hersheys caramel syrup and 3 mars bar chopped  mix and pour into base leave to set overnight in freezer decorate as desired

Peanut Butter and Caramel Cake

Decadence in every bite, I'm sure!!! This recipe was tried and tested, and a huge Thank You to aunty Hamida and Faaiza for sharing on this recipe and pic:-)

Ingredients:

Prep time: 30 mins | Cook time : 25 mins | Makes 1 large cake

For the cake
6 extra large eggs
450g castor sugar
300ml milk
150g butter
2 Tbsp peanut butter
1 tsp vanilla extract
350g cake flour
1 tsp salt
3 tsp baking powder

For the salted caramel
1 tin caramel treat
1 tsp flaked sea salt

For the peanut butter icing
1 heaped Tbsp peanut butter
250g Lancewood or Woolworths cream cheese (these have a firmer texture than other brands)
1 tsp vanilla extract
4 Tbsp (60g) icing sugar
80ml sour cream

Peanut brittle, chocolate covered peanuts, etc., to decorate

Method:

1. To make the cake, preheat the oven to 180°C.

2. Line and grease 3 round cake tins (18cm or 20cm will work well for this type of layered cake).

3. Beat the eggs and sugar until pale and fluffy.

4. Heat the milk and butter until the butter has just melted, remove from the heat and add the peanut butter and vanilla.

5. Mix the flour, salt and baking powder together.

6. Fold the flour mixture into the beaten eggs and sugar mixture, alternately adding some of the hot peanut butter milk mixture. Make sure not to make the mixture too dry by adding too much flour at a time.

7. Spoon equal amounts of the batter into each of your three cake tins. Place in the oven and bake for 20–25 minutes until golden brown and springy to the touch. (Don’t be tempted to take the cake out of the oven before the time is up. The cake will brown a fair bit due to high sugar content, but still needs the allotted time to cook through properly.) Remove and leave to cool completely.

8. To make the peanut butter icing, beat the peanut butter and cream cheese together until soft.

9. Add the vanilla and icing sugar, mix together, then add in the sour cream and beat well.

10. For the salted caramel, stir the sea salt through the caramel in a separate bowl.

11. Layer the cake with caramel and icing between layers.

Semolina Biscuits

Come weekend, and it's a must to have those cookie jars topped up....RIGHT????

Semolina Biscuits (Fego Biscuits)

1/2lb butter(250g)
3tbls oil
1/2 cup castor sugar
1/4 cup semolina 
2 cups flour

Cream butter and castor sugar until white then add oil and beat well,add semolina and enough flour to form a soft dough

Roll into balls and press down with a fork then bake at 160 until lightly brown.. Allow to cool slightly then coat in castor sugar.


Butternut Salad

Fresh, Tasty and Healthy, Just what the Doctor ordered ;-).  this salad recipe was kindly shared on by Shirin Ameer.


Butternut Salad

1/2 butternut, peeled and cubed or wedged and steam in very little water with a bit of brown sugar, till just before tender. Place in oven on grill for ten more minutes till soft. Season with salt, pepper and olive oil before placing in oven. Ensure there is no water residue. 

Dressing 
1/4 cup sweet chilli sauce 
2 tsp brown sugar 
1 -2 tbl vinegar
1 tsp liquid honey
Some finely chopped dhania
~Pour dressing over butternut when it comes out of the oven
Lettuce or rocket leaves
1/2 red onion finely sliced 
1 avo sliced or cubed 
Cream cheese dollops (I used sweet chilli cream cheese)
Fresh dhania chopped finely 

Topping
80 grams chopped pecans 
2 tbl sesame seeds 
2 tbl flaked almonds 
Roast above till pale gold

Set butternut over lettuce leaves.Top with onion, avo, cream cheese and dhania.Put nuts last.(Kindly Shared on by Aunty Shirin Ameer)


Chicken Calzones

A very versatile dish, served as either a light meal or as a savoury.  This recipe has received a lot of attention and was kindly shared on by Ayesha Twam.

1kg chicken fillet 
1 tsp ginger garlic,
1tsp chillie powder,
1tsp tumeric, 
1tsp blck pepper,
1tsp garam masala n 
1tsp daniya powder.
mix n keep aside.
braise 1 onion then drop in chicken mixture drop in 1 cup mix veg when almost dry 
add some smash(potato mash) and any sauce of ur choice (I used Nandos),
*I used basic pizza dough 
roll into rounds fill n shape like half moon.
when done brush egg, sprinkle parsley n cheese on top

Oreo and Banana Cream Dessert

This is one of my Personal Recipes,  an "on the spur of the moment " whip up.  It is a simple and easy dessert and well worth a try, the next time you are looking to treat your Sweet Tooth 😉.

Oreo and Banana Cream Dessert

Serves 4:

16 Oreo cookies
1/2 cup Fresh Cream
1/4 cup Nestle Caramel Sauce
2 Bananas
1Tbspn Castor Sugar
Method:
~crush Oreo cookies
~whip fresh cream,the with castor sugar until soft peaks reached
~gently fold in the caramel sauce into the whipped cream
~to the creamed mixture fold in 1 banana roughly chopped
~layer individual glass with banana cream mix,follow with crushed oreo.end with the banana cream mixture
~to Decorate: sprinkle a little crushed oreo on top, with a few slices of thinly sliced bananas and drizzle with Caramel Sauce 
~allow to set in refrigerator for a few hours,until ready to serve

Toasted Nuts and Seed Granola

TOASTED NUTS AND SEED GRANOLA:

1/4 cup honey
1/4 cup olive oil
1/4 cup brown sugar
Heat above on stove.

In large bowl mix together:
3 cups rolled oats
1/2 cup bran flakes
1/2 cup toasted coconut flakes
1/4 cup each of sesame seeds, sunflower seeds n pumpkin seeds
1 cup toasted mixed nuts of choice.
Mix above together then add in liquid mixture and stir to combine. 
Place on a large tray and toast at 150° for 20-30 mins or until golden brown.
