SAVOURY MUFFINS

Hmmm, The weather in my part of South Africa, makes me want to quickly whip this up.  I actually have tried this one before, It is Simple and delicious.  Humarah Assan, another of our Group Admins, has been sharing this recipe for years, and has become a firm favourite with all who have tried it.
A perfect Treat to pack away for lunch/lunch boxes, Or just as good with your morning tea.  WE HEART IT ... and it keeps with our #WANTNOTWASTENOT ideas...

Savoury Muffin

2 cups Self raising flour
1 tsp baking powder
Half tsp salt
1 Tblspn Italian herbs
1 egg
1 cup milk
Half can creamstyle sweet corn
Half cup oil
1 cup grated cheese
Sum pepper of ur choice cubed fine
Any left over chick, meat or steak
Method:
Mix all the above ingredients together. Greese a muffin tin. Add 2 dessert spoons of batter . bake at 180°c for 20- 25 mins
Note
The original rec was taken from another cooking group. It was an eggless savoury muffin. I tweeked it to my liking n came up wud dis. So if u r a vegetarian u can leave out d eggs n meat part. Also dat rec said mixed herbs but I used Italian herbs. It also said 3|4 cup milk but I felt it was too little so made it 1.

BRAISED VENISON FILLETS

Now Venison is not everyones choice, but there is always a 1st time to try something new.  If you are 'GAME' (wink, wink) ... then this is one recipe you should try.  Kindly shared by one of our Admins on group,  Bibi Ayesha, Who shows us how to turn this venison, into a delectable dish.




If you think that looks delicious, then here is the recipe for you to try...

Braised Venison Fillets 
Sunnyside Classics 
By Bibi Ayesha Kadwa  (Watalotwegot)
2 fresh fillets of Venison
At least 500g
Cut into medium slices
Marinate
1 tblsp garlic
1 tsp ginger garlic
1 tblsp Vinegar..i use white grape
Half tsp lemon pepper
1 tsp tevsn braai spice
Half tsp chilli pdr..or paprika
2 tsp rajah curry powder..mix masala
Salt or aromat..aBout 1 tsp
Mix well and leave to marinate
1 onion sliced
2 to 3 tblsp ghee
Makes lovely golden wagaar..set aside
2 to 3 large tomatoes
Put in a microwave for a few minutes
Remove and pull away the skin
Careful not to burn
Smash the tomatoes
In a heavy based pan
Add some ghee..u can use the ghee from the fried onion
Heat up and add in the meat
Fry on medium to high
Add in some curry leaves
When the water burns out and u get a sear add in the tomatoes and cook further
Last add in the fried onions
Sprinkle garum masala
Add whole green chillies
Chopped dhania
☀️☀️enjoy with hot rotis

Gravy Steak

Gravy Steak

500g Rump Steak Tenderized with mallet
1 onion sliced
1 - 2 tomatoes grated
1 tsp garlic
1 tsp Red Masala
1 tsp steak & chops spice
1 tsp Barbecue Spice
2 Tbs Steers Barbecue sauce (optional)
A splash of Soya sauce and Worcester
Sauce
1 tsp black pepper
A good sprinkle of Inna Paarman green onion, garlic & black pepper & cajun
3 Tbs tomato purée
1/2 tsp sugar
Salt to taste

Fry onions in oil until golden brown, then add steak and cook until juices of the meat go down, then add tomatoes and all the spices and the tomato purée. Allow to cook on low adding a little water to create a nice thick gravy. Serve with mashed potatoes and steamed veggies.

THAI FISH CAKES
(Melanie Kramar- Watalotwegot)


600g hake fillets
3 tbsp fish sauce
1 tbsp brown sugar
2 garlic cloves chopped
2 tsp grated ginger
250ml chopped coriander
3 tbsp red curry paste
Zest of 2 limes
1-2 tsp chili paste or chopped chilies
2 tbsp corn flour
1 egg beaten
1 bunch spring onions chopped, finely chopped
Oi for shallow frying

Process hake, fish sauce, sugar, garlic, ginger, coriander, curry paste, zest and chili in food processor for 20 seconds. Add cornfour and egg and bitz another 10 seconds. Do not over process. Transfer to mixing bowl and add spring onions. Mix till evenly combined. Rest in fridge for half an hour. Use wet hands and mix 2 tbsp mixture per patty – fatten slightly for even cooking. Heat large non-tick pan with 3 cm oil. Fry over moderate heat 3-4 minutes per side. Drain on paper towel.

SWEET THAI CHILI SAUCE

Ingredients
1/2 cup rice vinegar (or white vinegar)
1/2 cup white sugar (plus 2 tablespoons)
1/4 cup water
3 tablespoons fish sauce
2 tablespoons sherry (or Shaoxing Rice Wine)
3 cloves garlic (minced)
1 tbsp dried crushed chili
1 ½ tbsp cornstarch (dissolved in 3 to 4 tablespoons cool water)

Here’s how to make it -

Place all ingredients—except the cornstarch-water mixture—in a saucepan or pot. Bring to a rolling boil. Reduce heat to medium and let boil for 10 minutes, or until reduced by half. Reduce heat to low and add the cornstarch-water mixture. Stir to incorporate and continue stirring occasionally until the sauce thickens about 2 minutes. Then remove from heat and check seasoning.

JALEBI

Jalebi is one of many Sweet delicacies that can be found in the Indian 'Sweetmeats' range.  This is usually a very time consuming product to make, but today Madina Mukadam shared with us an easy and fuss free way to make these sweet treats.

A perfect treat to munch on, or take along to a function, like Madina had done recently, when she had to attend a Mendhi/Henna ceremony. These Crunchy and Syrupy Jalebis, must have been a hit Madina, Thank you for sharing with us, and we LOVE it 💕

Jalebi Recipe

1 cup white flour
1/4 cup gram flour
A pinch of orange food colour
1 Tablespoon yoghurt
Mix all together with enough water to make batter as for pancakes
Before frying add 1 tsp of ENO (the original one) to batter and mix well
Oil for frying
Squeezy tomato sauce bottle for batter

Syrup
2 cups white sugar
1 cup water
2 Tablespoons lemon juice
A few saffron strands
Boil all together till you get one string consistency, Lower heat and keep on low flame to keep syrup warm

Heat oil for deep frying in pan, using bottle with batter, make rings starting from centre going out, when crisp on one side turn over and fry on other side.
Remove from oil and immediately put into sugar syrup, after a few seconds turn over so that both sides are coated...
Remove from syrup and serve
Enjoy 



MOIST CHOCOLATE CAKE

When Special people in our lives are celebrating another milestone, spoiling them by baking is just one way of showing how much we care for them.  That is exactly what our Lovely Raeesa Abdool Carrim had done recently, when she baked this chocolatey goodness for her father-in-law, who celebrated his birthday.

Moist Chocolate Cake by Raeesa Abdool Carrim - (Watalotwegot)

3 eggs

1 cup sugar
1/2 cup oil
1/4 cup cocoa dissolved in 1/2 cup water. ( leave to cool)
2 teaspoon baking powder
1 cup flour
1/4 teaspoon salt
1 teaspoon vanilla essence

Method:
Beat eggs and sugar until light and fluffy
Add oil and beat well
Sift dry ingredients. Fold into mixture
Add cocoa mixture
Add vanilla and mix lightly 
Grease pan. Bake at 180 degrees Celsius for 25- 30 mins.

Icing: 
250 g soft butter
4 cups icing sugar
Salt
4 tablespoons cocoa
A little milk
Vanilla essence

Method:

Cream butter. Sift all the dry ingrediants. Add vanilla essence and milk to get desired consistency. 

Ganache: 

1 × 100g lintd dark chocolate. (85%)
2 × dairy milk slabs.
1 × 250 ml fresh cream

Method: make fresh cream hot on stove. Add to chocolate bits. When melted spread onto cake.

I topped with mini oreos, lintd, ferreros, top deck, caramel popcorn and wafers.

Bake and ENJOY

Shallot and Feta Savoury Muffins

For as long as I can remember...Aunty Shirin has been one of the 1st members on the Watalotwegot, And everytime she makes these savoury Muffins, they always look great. Makes me want to reach into that tin and grab one😉.

Shallot and Feta Savoury Muffins (Shirin Ameer).                           
2 cups flour
4 level teaspoon Baking Powder
1 teaspoon salt
Dash black pepper

1 egg
1/2 cup oil
1 and 1/4 cup maas (plain yoghurt)
1 teaspoon ground green chillie(optional)

3/4 cup chopped feta
1/2 cup chopped shallot

Beat togther egg, maas(yoghurt), oil and green chillie
Add dry ingredients, chopped shallot and feta.
If batter is too stiff, add little milk or maas/Yoghurt and mix
Spoon into muffin pan. Sprinkle little crumbled feta over batter and sprinkle origanum!
Bake @ 180 till golden brown! ENJOY! (SHIRIN AMEER)

Mini Rainbow Pavlovas

How awesome do these Mini Pavlovas look😍.  Spreading a little colour, is Sharona Dada, with these Rainbow Pavlovas. We love it. Thank you for sharing on this recipe💕

Mini Rainbow Pavlovas

Inspired by Donna Hays
Adapted by Sharona Dada

4 egg whites
1 cup (220g) caster (superfine) sugar
3 teaspoons cornflour (cornstarch)
1 teaspoon white vinegar
Gel food colours
whipped cream and fresh fruit, to serve

Preheat oven to 150°C (300°F).
Place the eggwhites in the bowl of an electric mixer and beat until soft peaks form. Gradually add the sugar, beating well until the mixture is glossy. Sift the cornflour over, add the vinegar and fold through.

Divide the meringue into 3 bowls and colour each one with a couple of drops of gel food colouring. Use a toothpick to add one drop at a time. Fold the colour in using a spatula.
Spoon the meringue into a piping bag and pipe as desired.

Place in the oven, reduce the heat to 120°C (250°F) and cook for 45 mins. Turn the oven off and allow the meringues to cool in the oven.
To serve, top with whipped cream and fresh fruit.

Jalebi

Now this is a fabulous, syrupy sweet treat. Especially for those with a sweet tooth😍

JALEBI BY RAZ💝
1 cup cake flour
2 1/2 teaspoon baking powder
1 Tablespoon ghee
1/2 cup inkomazi(yoghurt/maas)
Yellow or orange colour

SYRUP:
1and 1/2 cup sugar
1cup water
2 teaspoon lemon juice
Bring to the boil until syrup string forms or to the touch when you feel it's sticky enough.
Mix all ingredients..
Form spiral shape directly into hot oil...fry..
dip in syrup and serve...
enjoy.

Breakfast Quesidellas by Haseena inspired by The Pioneer Woman

Beat 3 eggs, season with salt and pepper
In a non stick pan, stir fry some chopped onions, chopped bell peppers, sliced mushrooms and a desseeded chopped chilli Add in beaten eggs and allow to cook until just done remove from heat. Grate some cheese and set aside. Heat up a griddle and rub generously with butter. Place a quesidella wrap and assemble in  the following order (work quickly here as you don't want to burn the wrap)
Cheese
Eggs
More cheese
Fried sliced sausages, salami or polony
Place another wrap over and toast. Flip over and toast the other side until cheese melts. Remove from heat. Slice into quarters and serve hot.

Easy Sponge Cake



Nothing Beats a Simple and delicious Sponge cake....WITHOUT THE FRILLS😋.  This is exactly the type of cake I would reach for at a tea table, and today Aunty Fawzia Safla was kind enough to share her Pic and recipe for a sponge cake.

Sponge Cake

3 eggs
1cup castor sugar 
2tbl oil
1/2 cup milk 
1 tsp vanilla 
1cup flour 
1 tsp Baking powder
Beat egg whites stiff stiff then add castor sugar beat then add yolks an vanilla beat add in milk, oil, flour and Baking powder 
Beat altogether 
* can bake in square pan or loaf pan 
* Bake at 180 degree Celsius

Green Masala

Yet another awesome share. A Recipe shared by Aunty Zarina, teaching us younger ladies, how to go about preparing Green Masala. This can be used in various dishes that need Green Chillies, Or Red Chillies. This type of Masala is almost always found in an Indian/Muslim Home stored away in containers, in the deep freezers. JUST LIKE GRANNY USED TOO😊

Green Masala (Zarina Assan)

Take 2 cup green chillies and 
1 cup galic 
~grind in food processor .
~when nicely ground, put in Ά̲̣ dish 
~add 2 tablespoon oil 
~1tablespoon salt..
~2 tablespoon vinegar..
Now freezer ready.
*optional- can add Tumeric powder when grinding.
** Use in Samoosa Mince and Kabaabs (Zarina Assan)

Coconut, Oats and Chia seed Muesli Bars

This Cookie recipe, shared by Zahira, is jammed full of wholesome goodness. Muesli, Nuts, seeds....you know you just want to get a batch going😉. A very easy to follow recipe, I Hope you do give it a try,  and I'm looking forward to your comments/feedbacks below.  Do send through a pic if you decide to whip up a batch.

Coconut, Oats and Chia seed Muesli Bars

1/3 cup coconut oil
2/3 cup honey
1/4 cup brown sugar
1 cup shredded coconut
2 cups rolled oats
1 cup Natural almonds
1/4 cup black chia seeds
1/2 cup finely chopped dates
1/2 tsp ground cinnamon

Preheat oven to 180
Place oil honey and sugar in a pan over low heat. Stir till melted. Place into a large bowl and add in rest of ingredients. Mix to combine. Spoon into a lightly greased 20x30cm slice pan lined with non stick baking paper. Bake for 25mins or until golden. Leave to cool completely before slicing.

My notes:
I added a combination of cashew, almonds and hazelnuts and used 2tblsp less sugar.
I also added a combination of chia seeds (2tblsp) and flax seed (2tblsp)- (Zahira Salejee)

Mutton and Veg Stew

We are so blessed to have among our awesome Lovelies, some truely marvelous Women, who have spent many years, labouring away in their kitchens, with Love Of Course, that we can now benefit from them in many aspects of life, most ever willing to part with their family recipes. This post features a Recipe by Aunty Rashida Akoonjee , who took the time to write out her recipe and share on with us.

💕 MS💕

Mutton n Veg Stew (Rashida Akoonjee)

500g mutton cube and wash 
2 tsp ginger garlic
2 tsp salt 
2 tsp crushed chillies
2 tsp chillie powder 
2 tsp dhana jeeroo 
3 tomatoes liquidized 
4 Tbls tomatoe puree 
Lemon juice 
1/2 cup maas 

-Mix all together in meat n set aside 
-Green beans Double Beans Carrots peas baby cabbage n some gudra cut carrots n beans wash all veg
-In a flat pot add some oil n ghee slice 1 big onion lil jeeroo n 3 pcs taj wen it turns pink in color add marinated meat braise well 5 to 10min add veg on top but do nt mix leave on low heat to cook 
-Cut cabbage into halfs n steep in boiling salted water on stove fr 5 min drain out water take care not to break up cabbage cut n fry potatoes leave aside 
-Now check from side of pot to see if meat n veg are cooked, heat must be slow n don't add water
-when meat is cooked layer the potatoes n cabbage on top let it cook on low till moisture is evaporated
-top with a few green chillies

Kitchen Tip - Clean-Up of Dropped Eggs

Aamli Chillies

For those wondering..."What is Aamli", here is a brief breakdown of it and can be found at your local supermarkets or Indian/Asian grocers.

The tamarind tree produces edible, pod-likefruit which are used extensively in cuisines around the world. The Tamarind fruit is best described as having a Sweet And Sour taste.

This recipe with pic, was shared by Sajida Jogiat,  makes your tastebuds salivate, even if you not a chillie lover like me. Give this recipe a try the next time you want to add a kick to your normal everyday dishes, Aamli Chillies may be Used as a Relish/Pickle

Aamli Chillies

~Fry any big chillies,round or long ones in a little oil on low heat.
~When chillies change colour add. ~Ground garlic,
~crushed jeera (Cumin)
~Dhania/Jeera Powder and braise again till aroma of spices come out.
~Then add aamli juice, little sugar and salt to taste an boil till semi-dry.
~Enjoy!!!

~Aamli Juice Is made by Steeping The Tamarind Pulp in water.

EASY MILK TART

So I Decided to post one of our very early posts from way back when we started the group, this is an easy Dessert Recipe, Milk Tart OR MelkTert, as it's commonly known as here in South Africa. There are many different recipes out there, lots that actually make a sweet pastry base from scratch, and then there are recipes like these , kindly shared on by Dilshaad Gaffoor, that easily adapts the recipe using a biscuit base.

Easy Milk Tart
Crust: 

1 packet of Tennis Biscuits, crushed
125 g Butter, melted 

Filling: 

500 ml (2 cups) Milk 
Piece of Cinnamon Stick
Dash of elachi powder. 60–100 ml White Sugar, depending on personal taste
2 Eggs
45 ml (3 tbsp) Cornflour
45 ml (3 tbsp) Flour
3 ml ( ½ tsp) Vanilla Essence
30 ml (2 tbsp) Butter
Cinnamon and Sugar, for sprinkling 

Method
Crust 

Combine the crushed Tennis biscuits and melted butter, and press into a pie dish. 

Filling 

Heat the milk with the piece of stick cinnamon to just under boiling point. 

Meanwhile, lightly beat the eggs with the sugar, then add the cornflour and flour. 

Pour the hot milk onto this mixture, stirring rapidly. Return the mixture to the heat and cook, stirring until the mixture becomes thick. Thorough stirring is important to prevent the mixture from catching on the bottom of the pan and to prevent lumps. 

Off the heat, add the vanilla essence and the butter. Stir well until the butter is melted. 

Pour the mixture into the prepared tart crust. Sprinkle with cinnamon sugar.

PERSONAL NOTE:
*I cheated and just piled the mixture onto Marie biscuits , could also use individual tennis biscuits*(Dilshaad)
