Almond Chicken

Hmmmmm...I've been left drooling as I sift through posts on the WATALOTWEGOT Facebook group. So spoilt for choice when it comes to "WHAT TO COOK" dilemma.

With this post, Sumayya Adam, makes this daily dilemma, a little bit easier, by sharing with us her pic and the recipe she tried out. THANKS STACKS Sumayya, WE HEART IT!!!

Almond Chicken

1 CHICKEN CUT INTO 8 PIECES
2 TABLESPOONS LEMON JUICE
2 BIG SPOONS TOMATO SAUCE
2 BIG SPOONS MAYONAISSE
A BIT OF GROUND ELACHEE (CARDAMOM)
3 TEASOON RED MASALA
1 TABLESPOON COURSE DHANA (COURSE CORIANDER)
1 TEASPOON SALT
2 TABLESPOON GROUND ALMONDS (HEAPED)
1 TEASPOON FRESH GROUND RED CHILLES (IF NEEDED)
FEW STEANDS OF SAFFRON
2 TABLESPOONS WAGAAR (OPTIONAL) -(FRIED ONIONS)

~ MARINATE FOR A FEW HOURS.
~ HEAT 3 TABLESPOONS BUTTER, ADD A FEW CINNAMON STICKS
~ ADD CHICKEN.
~ COOK and LEAVE SAUCY.
~ CAN ALSO PUT A FEW PICKLING ONIONS AND BABY POTATOES IN THE COOKING OR SERVE WITH STEAMED VEG
Note: I don't follow measurements as above, I add garlic masala n ginger garlic masala, and extra garlic and if I want more strong I add red fine chilies and rough red chilies as well.. I don't use fine badaam, I used sliced badaam

FRIED MASALA FISH


EASY AND DELICIOUS, This Fried Masala Fish is always a hit in many Indian Family's homes.  Perfect to enjoy as is, or Paired with your favourite vegetarian dish, like Dhal, this will soon become a firm favourite in your home too.

Fried Masala Fish

1kg fish
Add following ingredients to the fish and marinade for an hour 
2 teaspoons aromat original flavour
2 minced cloves of garlic
3 tablespoons of lemon juice
2 teaspoons crushed red chillies (optional)
2 teaspoons chilli powder
1 teaspoon turmeric powder
1 teaspoon freshly ground black pepper
Fry fish approximately five to seven minutes per side in shallow oil. Add salt to taste

RASHIDAS PERI PERI CHICKEN

NOW WHO DOESN'T ENJOY SPENDING THE LEAST AMOUNT OF TIME IN THE KITCHEN???

This PERI PERI CHICKEN recipe will give you just that, time to rest, because this is a quick and easy meal to prepare.

PERI PERI CHICKEN

1 whole chicken...disjointed
1 tablespoon ginger garic paste
1 tablespoon red chilli paste
3 tablespoon steers garlic sauce
2 tablespoon steers peri peri sauce
3 tablespoon mustard sauce
Salt to taste
3 tablespoon melted butter

Mix all the above in a bowl...mix well taste if more sauce is needed. Smear chicken well, leave to marinate few hours or overnite for better results...
Cook in a pot for few minutes and transfer in a hot oven ...to grill

Bannoffee Pie



Rubina Khatri is one talented lady, while making the most beautiful of cakes, she also wow's us on group with her meals and desserts.  Now who can say NO to dessert, and this Bannoffee Pie looks so inviting.

Bannoffee Pie (kindly shared on by Rubina Khatri > Watalotwegot)

For the Base:
Approx 14 Digestive biscuits
75g butter (melted)
1/4 cup chocolate chips


Pie Filling:
1 can evaporated milk - chilled overnight
200g carnation caramel treat
2 cans cream
1 Tablespoon gelatine
1/4 cup water
Bananas
Caramel syrup - ( I used hersheys)
Whipped cream for decoration 


Instructions

~ Crush biscuits, melted butter and chocolate chips in blender, then press flat in pie dish and bake for 10mins at 180c/350f.

~ Sprinkle gelatine over water to bloom and mix. After few minutes when it becomes thick and slushy dissolve with gentle heat and leave aside to cool.


~ Whisk chilled evaporated milk till light and fluffy, then Whisk in caramel treat, cream and lastly mix in the dissolved gelatine.

~ Pour this mixture on the biscuit Base and refrigerate for a few hours or overnight to set.

~ Before serving add chopped bananas, pour over caramel syrup and decorate with whipped cream.

Donuts

Treats are most welcome anytime, and that is exactly what Zakia Gafoor had ready for her a kids to enjoy, A DONUT for treats. 

This delicious, and easy to follow recipe was kindly shared on by Zakia, a HUGE THANK YOU to her for taking time to share her pic and recipe used with us. 

Just one look at this pic, will have you heading to your kitchen, to whip up a batch too.  How divine do these donuts look😍.


DONUTS - (KINDLY SHARED ON BY ZAKIA GAFOOR) 
WATALOTWEGOT

2 eggs
1 cup milk
1 1/2 teaspoon cinnamon powder
1 cup sugar
Beat all this till light and fluffy

Now Add:
4 cups flour
3 teaspoon baking powder

Add to egg mix and form a dough
If sticky add little more flour.

Leave for about 5 minutes to stand. Roll out, to about 2cm in thickness and cut dough using a donut cutter, and deep fry.

Dip quickly Sugar syrup (must be a little weak, Normal syrup mix.) OR roll in Cinnamon Sugar

Shallot and Feta Savoury Muffins

For as long as I can remember...Aunty Shirin has been one of the 1st members on the Watalotwegot, And everytime she makes these savoury Muffins, they always look great. Makes me want to reach into that tin and grab one😉.

Shallot and Feta Savoury Muffins (Shirin Ameer).                           
2 cups flour
4 level teaspoon Baking Powder
1 teaspoon salt
Dash black pepper

1 egg
1/2 cup oil
1 and 1/4 cup maas (plain yoghurt)
1 teaspoon ground green chillie(optional)

3/4 cup chopped feta
1/2 cup chopped shallot

Beat togther egg, maas(yoghurt), oil and green chillie
Add dry ingredients, chopped shallot and feta.
If batter is too stiff, add little milk or maas/Yoghurt and mix
Spoon into muffin pan. Sprinkle little crumbled feta over batter and sprinkle origanum!
Bake @ 180 till golden brown! ENJOY! (SHIRIN AMEER)

Mini Rainbow Pavlovas

How awesome do these Mini Pavlovas look😍.  Spreading a little colour, is Sharona Dada, with these Rainbow Pavlovas. We love it. Thank you for sharing on this recipe💕

Mini Rainbow Pavlovas

Inspired by Donna Hays
Adapted by Sharona Dada

4 egg whites
1 cup (220g) caster (superfine) sugar
3 teaspoons cornflour (cornstarch)
1 teaspoon white vinegar
Gel food colours
whipped cream and fresh fruit, to serve

Preheat oven to 150°C (300°F).
Place the eggwhites in the bowl of an electric mixer and beat until soft peaks form. Gradually add the sugar, beating well until the mixture is glossy. Sift the cornflour over, add the vinegar and fold through.

Divide the meringue into 3 bowls and colour each one with a couple of drops of gel food colouring. Use a toothpick to add one drop at a time. Fold the colour in using a spatula.
Spoon the meringue into a piping bag and pipe as desired.

Place in the oven, reduce the heat to 120°C (250°F) and cook for 45 mins. Turn the oven off and allow the meringues to cool in the oven.
To serve, top with whipped cream and fresh fruit.

Royal Cream Biscuits

With her twin boys busy with exams, Anisa ensures her cookie jars are always topped up.  Braving the sweltering weather recently in South Africa, she managed to make these treats for her boys.

ROYAL CREAM BISCUITS
(Kindly shared on by Anisa Suliman)                          

Ingredients:
250g margarine (stork bake works well)
½ cup icing sugar sifted
½ tsp almond essence
2 cups cake flour sifted
½ cup corn flour sifted
Method:
Beat margarine and icing sugar until creamy.
Add essence and a little of the flour and maizena at a time until the dough is soft yet pliable.
Break into little walnut balls and shape into small rectangular pieces of about 3mm high.
Using a fork, make an indentation into the biscuit dough.
Bake in a pre-heated oven set at 160 degrees for approx 20/30 minutes until golden brown.
Remove from oven and cool for 45 minutes to an hour.
Prepare the icing while waiting for the biscuits to cool:
¼ block margarine
½ cup icing sugar sifted
½ tsp almond essence 
Beat until creamy.
Sandwich 2 biscuits and roll around in castor sugar.

Adega Style Chicken

Zeenat is one of Watalotwegot very 1st members, from years ago. She is a beautiful young lady who is mum to 2 adorable little daughters. I am sure she will be passing on all her culinary skills on to them.
In the meantime, we are so grateful to Zeenie, as she is affectionately known, who shares her skills with us all, THANK YOU ZEENIE.
How amazing does that chicken look in the pic.
   
Adega Chicken
(Zeenie _ Zeenat Langry - Watalotwegot)                    
Chicken disjointed, washed  and drained.                       
1 & half tsp Crushed Chillie
1/2 tsp Tumeric                  
2 tsp Adega Spice        
Some Egg yellow powder for colour
Generous squeeze of lemon       
Salt to taste
                            
To this add 1/3 Cup of Fresh Cream from 500ml Fresh cream
*balance you will keep for Sauce
2 Tablespoons Melted Butter
                     
~Marinate for about an hour.                                        
~Cook in a pot till chicken is done and Set aside.                 
In another pot prepare Sauce:            
Fresh cream that was left over from above 
1 Tablespoon of Fresh Lemon juice          
Dash of black pepper.            
1 Tablespoon of Adega Spice
              
•Bring to boil..it needs to be thick but a little runny, you can add a little Maziena to thicken
•Place chicken in casserole and pour sauce over.            
•Put in oven to grill till chicken is a little brown.
•Garnish with Chopped coriander and fresh green chillies.                  
•I serve this with pita, chips, green salad and veggies

Jalebi

Now this is a fabulous, syrupy sweet treat. Especially for those with a sweet tooth😍

JALEBI BY RAZ💝
1 cup cake flour
2 1/2 teaspoon baking powder
1 Tablespoon ghee
1/2 cup inkomazi(yoghurt/maas)
Yellow or orange colour

SYRUP:
1and 1/2 cup sugar
1cup water
2 teaspoon lemon juice
Bring to the boil until syrup string forms or to the touch when you feel it's sticky enough.
Mix all ingredients..
Form spiral shape directly into hot oil...fry..
dip in syrup and serve...
enjoy.

Watermelon Sorbet

Zahira has been a regular contributor here on Watalotwegot for many years. Here is another delicious make she treated her family too last week. Great for a balmy warm weather👌

WATERMELON SORBET 
(ZAHIRA SALEJEE)

6 cups deseeded melon
3/4 cup water
3/4 cup sugar
3 tbsp fresh lime juice

Bring sugar n water to the boil for abt 6-8 mins, then lower to a simmer. Switch off n leave to cool for an hour.
Blitz melon n lime juice together, add in sugar syrup and blitz till combined.
Freeze in container and give it a stir every hour, till its frozen. Then enjoy.

Breakfast Quesidellas by Haseena inspired by The Pioneer Woman

Beat 3 eggs, season with salt and pepper
In a non stick pan, stir fry some chopped onions, chopped bell peppers, sliced mushrooms and a desseeded chopped chilli Add in beaten eggs and allow to cook until just done remove from heat. Grate some cheese and set aside. Heat up a griddle and rub generously with butter. Place a quesidella wrap and assemble in  the following order (work quickly here as you don't want to burn the wrap)
Cheese
Eggs
More cheese
Fried sliced sausages, salami or polony
Place another wrap over and toast. Flip over and toast the other side until cheese melts. Remove from heat. Slice into quarters and serve hot.

Koeksister

There are always a few recipe requests that ladies are looking out for, and the Best shares would be ones that have been Tried and Tested.
Like these Koeksister...Doesn't these look divine😍. Yet another of many South Africans favorite sweet treat.
Special thanks to Sajida Rasool for sharing on her pic💕 and this is the recipe she had tried. Old family tried and tested recipes are simply the best👌

Koeksister (By Fatima Sydow)
My moms Koeksister recipe

Ingredients

4&1/2 cups of cake flour

1& 1/2 cups of lukewarm water

1 tsp of baking powder

1  sachet of Instant yeast

1 tablespoon of sugar

3  tbsp of butter( melted)

1 tsp of salt

1 cup of soft mashed potatoes

3 teaspoons of grinded or finely chopped dried naartjie peel

1&1/2 tablespoons of freshly grated  Ginger ( makes all the difference )

1 teaspoon of mix spice

1 teaspoon of aniseed

2 teaspoons  cinnamon

1/2 a teaspoon of freshly grounded cardamon seeds

Oil for deep frying

Sugar and stick cinnamon for sugaring

Fine coconut

Method

Mix all ingredients together with warm water ( add water until you get a sticky dough ) dough must be very soft/ almost wet .Knead dough for 10 minutes using a little oil on your hands to stop from sticking, rub some oil over dough , cover with cloth and allow to rise for an hour or when double in size  . Roll out into little ball shapes and fry in  oil on medium to high heat until dark brown . Sugar and cover with fine coconut .

Sugar water
Boil 3 cups of sugar with 3 cups of water and a few cinnamon sticks for about 35 minutes on high heat ...then simmer when sugaring the koeksister.

Makes about 40 koeksisters

Please note - Its very important to not have a dry and tight dough . It must be almost sticky - if your dough is tight your yeast won't have anywhere to expand , resulting in a dense and dry  koeksister .

Milk Tart

Hmmm....Milk Tarts are an all time favourite among the South African Desserts.
This one was tried by Zubeida Mahomed, who had mad them into small Tarts, but works well served as one big tart.

MILK TART
(Zubeida Mahomed)
125g butter
1/2 Cup castor sugar
2 tablespoon oil
Cream well together
Then add
1 egg
1 teaspoon vanilla essence
2 cups flour
2 teaspoon baking powder
Make dough using creaming method cover n leave in fridge for 1/2 an hour  
Pat into 2 tart pans pick a bit with fork n bake, in moderate oven till done.  meanwhile make custard

TOPPiNG
3 cups milk
2 Tablespoon butter
Boil together
beat the following with
egg beater
1 cup milk
2 tablespoon maizena/corn starch
2 tablespoon flour
1 teaspoon vanilla essence
1 cup sugar
2 eggs
Pinch of salt
Add to boiled milk
mix...and whisk well pour over baked crust and refrigerate till nice and set
Sprinkle with cinnamon powder (Zubeida Mahomed)

Yellow Moong Daal

This Easy and Yummy dish was prepared by Razia Kathri, who kindly shared on the recipe she used.
An Indian Vegetarian Dish that teams up well with a Piping Hot Roti.

Peeli Moong Daal (Yellow Moong Daal)
-Moong daal washed and
Soaked
-in a pot put oil...when a bit
hot, add whole jeera, small pieces of garlic, green chili cut and curry leaves
-now add cubed onions. .
sauté for a while..till translucent.
-add a bit of hing powder
-now add your Moong daal sauté with salt to taste.
~now add haldi(tumeric and dhana jeeru powder(coriander/cumin powder) and a bit of garam masala powder..cook a bit
-add cubed tomatoes..cook more..then add enough water for daal to cook through...

* *my husband like it a bit burnt..meaning must touch at the bottom..it has that crunch daal..it's devine. .

2kg chicken quarters
1 tablespoon ginger garlic
1 tablespoon chilliepowdr
1 tablespoon garam Masala
1 tablespoon lemon juice
Salt to taste
1/4 cup yogurt
1/4 cup Aminas Tikka Paste 
Marinate for 2 hours, then grill in oven
I served with Naan and Masala Chips
ENJOY!!!

Polo Mustada

POLO MASTADA

Chicken fillet sliced.
Marinate with 1tblsp red ginger garlic masala , 1 tsp salt, 1/2 tsp Arad , crushed red chillies ( to taste ). Cook until done.
Braise in little oil. Set aside.
Slice brinjal thinly . Fry until crispy, season with salt and pepper. Leave aside.
Melt butter in pan, add mustard seeds and fry sliced mushrooms.
Make a thick cheese sauce with fresh cream , maizena , salt , pepper, grated cheese.

Layer on serving plate Chicken then mushrooms then brinjal slices and then top with cheese sauce.

Nb: I added crushed garlic as well to the Chicken marinade. And I add ghee and oil to Chicken whilst cooking and a little water. I marinate my brinjals in salt , dhunia jeero , fine red chilli powder and oil. For the sauce I take one fresh cream, abt half cup milk, 2 -3 tsp maizena and about one and half cup cheese, salt and pepper.

Veggie Bake




Sometimes you should Just Go With The Flow!!!
Like Sameera did with this Veggie Bake, with no specific recipe, she simply put these ingredients together, and the outcome was Fantastic.  Her family thoroughly loved this bake, and today she shared with us her way of making this.  Do give it try and look forward to your feedback.

Recipe for Veggie Bake

How To:
Cut up potatoes in wedges and fry
Cut Butternut into big chunks and  steamed with salt
Steam Mix veggies with salt then braise with jeera and butter.
Tomato cut in rings 
Cut onion into rings and Fry

Next layer wedges at the bottom of casserole, then mixed veggies, butternut, fried onion rings and tomato on top.
Placed blobs of butter on top and bake in oven for 15min.
Once done sprinkle the top with crushed cheese and onion chips
serve with grilled chicken.

Custard Cake

hmmmm....A delightfully colourful Cake😍

A definite must try if you want to have both custard and cake for dessert/tea-time treat. Thank You for sharing your pic and recipe used with us Nazrina💞

CUSTARD CAKE- NAZRINA JOOSUB

Cake:
2 cups flour.
2 tsp baking pwd

1/4 lb butter. (125 grams)
3/4 cup sugar.
Beat the above in a machine until it resembles bread crumbs.
Whisk 2 eggs with 1 tsp vanilla essence & add to the mixture. 1/4 to 1/2 cup milk. Add in slowly to form dough. Dough must be firm like that of roti. Make 7 balls. Roll each 1 out like a roti. Not too thin. Bake each for about 7 minutes. Stack with nice rich custard.( 3 colours)

CUSTARD:
1 L milk
4 Tblsp custard pwd mixed in milk
3/4 cup sugar
1 tsp vanilla essence
1/2 tin condense milk
Boil milk. Remove from heat. Add custard and stir till thick. Add vanilla essence, sugar n condense. Boil till thick. Cool. Mixture must not be very thick. Divide into 3. Colour 1 with pink colour & 1 with green colour. Make layers using the cake & different coloured custard. End with custard on the top. Pour Nestle Cream over(optional). Crumble 1 cake on the last layer. (Nazrina Joosub)



Tamarind Brinjal

A wonderfully easy dish to try for Vegetarians, OR non Vegetarians;-)
*Brinjal = Egg Plant

Tamarind Brinjal (Egg Plant)

1 onion sliced
2 tablespoons of tamarind (extracted from pulp dissolved in water)
1 tomato diced
salt to taste
2 green chillies
1 teaspoon chilli powder
2 large brinjals chopped
fry onion in two tablespoons oil and a teaspoon of butter ghee
add brinjal with spices tomatoes tamarind salt nd chillies and 2 potatoes cubed . reduce heat and cook on low until potatoes are cooked.
