Smoked Chicken Tikka Bites

Summer weather calls for easy and delicious meals.  Fatima Jada, shows us how to do just that, in her post she recently shared on our WATALOTWEGOT Facebook Group.  WE HEART IT Fathima, SHUKRAN for sharing this with us.  Do give this a go, and drop us a feedback if you try it.

SMOKED CHICKEN TIKKA BITES
RECIPE AND PIC CREDIT: FATIMA JADA (Watalotwegot)

Marinate chunks of chicken in the following 
For 4 pieces of chicken fillet
Salt to taste

1 teaspoon Lemon pepper
2 teaspoon Lemon and herb BBQ spice 
2 teaspoon Tandoori spice 
1 Tablespoon Lemon juice
3 Tablespoon Yoghurt. 
Half teaspoon chilli powder if you prefer it spicier
Dash of oil


~ Push onto skewers and shallow fry in ghee/oil on medium heat till done.
~ Place a small foil container in the centre of the frying pan. 

~ Place a red hot coal into the foil and drop a spoonful of ghee onto the coal.
~ cover immediately with foil and allow to smoke for ten minutes. Enjoy

Creamy Chicken Corn Soup

Oh My Word.... I Know, I Know...Seems like I froze up with the colder weather months in South Africa, Since I Last posted.  Well I'm back, Thawing myself, hehehe, And What better way to warm up, than a delicious bowl of warm and hearty soup.

CREAMY CHICKEN CORN SOUP

Ingredients:
•60g butter
•¼ cup flour
•1 liter milk
•1 liter water
•1 packet Knorr thick veg soup
•250ml fresh cream
•1 tin creamstyle sweetcorn
•500g cooked salt+pepper chicken fillet (cubed)
•2 whole green chillies (slit longwards)
•Salt (to taste)
•White pepper (to taste)

Method:
1. Melt butter in pot, add flour and whisk to make roux for white sauce.
2. Add ½ amount of milk and water and whisk until becomes a thick mixture.
3. Add in fresh cream, corn, chicken and packet soup. Mix in.
4. Then add in remainder milk, water chillies and allow to come to a boil.
5. When thickened to consistency you desire, remove from heat and serve with crusty bread.

Chicken Biryani

And just like that, yet another religious day in the Muslim Calendar is upon us, Eid-Ul-Adha.  To help make preparations a whole lot easier for all on our group, Bibi Ayesha Kadwa, selflessly took it upon herself to do a Biryani Tutorial.  Her Family favourite recipe is also shared.

Now there are loads of different biryani recipes, the world over, but this is just one special way we South Africans go about making this dish, a dish fit for Royals.

A STEP BY STEP PICTORIAL FOR CHICKEN BIRYANI
(START WITH PIC AT TOP LEFT TO RIGHT UNTIL LAST PIC)


Chicken Biryani by Bibi Ayesha Kadwa 
Serves +/- 15 People
Marinate as follows...
2 cups or more of crushed fried onions..wagaar(fried until golden brown)
2 chickens, washed and cut into pieces
2 Tablespoon whole Jeera(Cumin)
3 teaspoon salt
3 teaspoon ginger and garlic paste
4 teaspoon chilli garlic masala
2 Tablespoon lemon juice
4 teaspoon crushed red chilli (Chilli Flakes)
1 or 2 teaspoon chilli powder
1 teaspoon tumeric
2 teaspoon dhana jeeroo(Coriander/Cumin Powder)
4 medium sticks cinnamon
6 elachie(Cardamom pods)
2 whole cloves
6 whole green chillies
Hand full mint leaves
Half cup Tomatoes chopped/liquidized
1 cup maas (You could substitute with Plain yoghurt)
Half cup plain yoghurt
2 Tablespoon tomato paste
1 packet of Saffron(1 Tablespoon)... roasted lightly in pan..crush..add boiling water..boil and steep..add to chicken when cool. leave to marinate.

Prepare the following...
4 to 5 cups rice boiled
2 cups masoor dhall (Black Lentils) ( boil this with some turmeric and salt).. Also prepare fried potatoes ..sprinkle some turmeric and salt then fry..boil eggs are optional

Layer and Cook Instructions
~ In a heavy pot, add about half cup ghee..half cup oil..sprinkle some rice and masoor..
~ then place meat close together..
~ leave some masala in dish..add the masoor to the little masala in dish..mix well..
~ then put masoor over the chicken..evenly..
~ now place potatoes and finally top with the rice..
~ Steep some Saffron in boiling water..mix into rice..add some ghee and oil on top..
~ cover pot with foil..place on stove on medium heat..
~ Cook for at least an hour..
~ And finish off in oven..
~ add boiled eggs when serving. 

Best Enjoyed with Raita..sambals..papar/papadums and salad😀
NOTE >>> the above recipe may be applied to lamb or mutton cuts as well <<<

Stuffed Parathas

An easy to make savoury dish, these Stuffed Parathas, with a Chicken Filling, will leave your family asking for more.  Zaibonisa was kind enough to share her results with this recipe, which she sourced from a book (Ramadan Delights).  When asked by another sister on the group, how it tasted? , Zaibonisa replied "Was very tasty, but I didn't make it strong because I got 2 little ones here" . 

So there you have it, a tried and tested recipe that is easily adaptable to suit your family. Do give this one a try, and we look forward to all your feedback and pics.



STUFFED PARATHAS

2 cups chick fillets cube
1\4 cup lemon juice 

1 teaspoon salt 
2 Tablespoon red masala 
2 teaspoon chicken spice 
2 Tablespoon tomato sauce
1 Tablespoon butter or ghee

DOUGH:
3 cups cake flour 
1\2 teaspoon salt
3 Tablespoon ghee
3 Tablespoon sour milk
1 1\2 teaspoon baking powder
1 Tablespoon fresh chopped greens
1 1\2 cup boiled water
Ghee for frying 


~ Place all ingredients for filling together in pot over medium heat until cook.
~ Remove and let cool 
~ Combine all dough ingredients in bowl add just enough water to form soft dough.

~ Divide dough in 12 balls, roll out forming circles.
~ spoon filling on top and cover with another circle, press edges and seal.
~ Fry in hot griddle turning several times using ghee as required until golden brown.

Mushroom Chicken

SIMPLY YUMMMMMMMM!!!

Mushroom Chicken - Mohsina Nosarka
Olive oil or butter
1 chopped onion
Mushrooms wiped and sliced
2 tbl tomato puree
1 cube of Chicken or veg stock
1 tsp garlic flakes
1 tsp mixed herbs
1 tsp veg spice
2 chopped green chillies
1/2 tsp salt
1. Saute the onion in butter.
2. Add the spices and braise.
3. Add the chicken, mushrooms and puree and cook until done. Add water as needed.
* Serve with roti or puri
* can also be served with sweetcorn gemsquash and honeyed vegetables.

Chicken Calzones

A very versatile dish, served as either a light meal or as a savoury.  This recipe has received a lot of attention and was kindly shared on by Ayesha Twam.



Chicken Calzones ( kindly shared by Ayesha Twam)

1kg chicken fillet 
1 tsp ginger garlic,
1tsp chillie powder,
1tsp tumeric, 
1tsp blck pepper,
1tsp garam masala n 
1tsp daniya powder.
mix n keep aside.
braise 1 onion then drop in chicken mixture drop in 1 cup mix veg when almost dry 
add some smash(potato mash) and any sauce of ur choice (I used Nandos),
*I used basic pizza dough 
roll into rounds fill n shape like half moon.
when done brush egg, sprinkle parsley n cheese on top
