Coffee Chiffon Cake
Coffee and Cremora Chiffon Cake
4 eggs separated
¾ cup boiling water
3 Tablespoon Coffee
2 Tablespoon cremora (Coffee Creamer)
¾ cup sugar
1/2 cup oil
1 teaspoon vanilla essence
2 teaspoon baking powder
1 cup flour sifted
~ Separate the egg yolks from the whites. Reserve.
~ Dissolve the coffee and the cremora in the boiling water. Reserve until cool.
~ Beat sugar, egg yolks, vanilla until light and fluffy.
~ Add the oil. Beat.
~ Alternate the sifted flour with the coffee mixture to the batter, mix well.
~ Beat the egg whites with a pinch of salt until stiff.
~ Add baking powder to the batter and fold in the egg whites.
~ Pour into a pan and bake in a moderate oven (180deg) for 30 to 45 minutes or until done. ~ Let it cool.
Meanwhile prepare the syrup:
~ Make a caramel with 1 cup sugar.
~ When done, add 2 tablespoon butter, 6 tablespoon milk in which you dissolved 2 teaspoon coffee, 6 tablespoon fresh cream, vanilla essence.
~ stir all well.
~ when the cake cools, unmould and pour the syrup over.
~ Decorate with nuts

APPLE FRITTERS
Recipe Credit: Fathima Bassa (Watalotwegot)
2 cups flour
1/4 cup + 2 Tablespoon sugar
2 teaspoon Baking powder
1 teaspoon salt
3/4 cup milk
2 Large eggs
2 Tablespoon melted butter
1 teaspoon vanilla essence
1/2 teaspoon cinnamon powder
2-3 sweet apples, peeled, cored & chopped (3 cups)
METHOD
~ Sift together dry ingredients in a bowl.
~ Whisk wet ingredients separately &
~ Gently fold into flour mix until just combined.
~ Then fold in cubed apples.
~ Fry on medium heat till light to golden brown.
~ Cool, dust with icing sugar. ...ENJOY

Carrot Halwa

1 litre fresh milk
1 tin ideal milk
1 tin condensed milk
~ Cook till gets dry then add
1 cup milk powder
Little saffron
Little Red or orange colour
~ add chopped badam and pistas...
~ cook till the ghee separates. ..
~ decorate as desired.
* Check for sweetness..*If you want it more sweet, add more condense milk.

JALEBI
A perfect treat to munch on, or take along to a function, like Madina had done recently, when she had to attend a Mendhi/Henna ceremony. These Crunchy and Syrupy Jalebis, must have been a hit Madina, Thank you for sharing with us, and we LOVE it ๐
I think I am going to give this one a try...someday soon :-), HOW ABOUT YOU???
1 cup white flour
1/4 cup gram flour
A pinch of orange food colour
1 Tablespoon yoghurt
Mix all together with enough water to make batter as for pancakes
Before frying add 1 tsp of ENO (the original one) to batter and mix well
Oil for frying
Squeezy tomato sauce bottle for batter
Syrup
2 cups white sugar
1 cup water
2 Tablespoons lemon juice
A few saffron strands
Boil all together till you get one string consistency, Lower heat and keep on low flame to keep syrup warm
Heat oil for deep frying in pan, using bottle with batter, make rings starting from centre going out, when crisp on one side turn over and fry on other side.
Remove from oil and immediately put into sugar syrup, after a few seconds turn over so that both sides are coated...
Remove from syrup and serve

Donuts
This delicious, and easy to follow recipe was kindly shared on by Zakia, a HUGE THANK YOU to her for taking time to share her pic and recipe used with us.
Just one look at this pic, will have you heading to your kitchen, to whip up a batch too. How divine do these donuts look๐.
1 cup sugar
Beat all this till light and fluffy
4 cups flour
3 teaspoon baking powder
Add to egg mix and form a dough
If sticky add little more flour.
Leave for about 5 minutes to stand. Roll out, to about 2cm in thickness and cut dough using a donut cutter, and deep fry.
Dip quickly Sugar syrup (must be a little weak, Normal syrup mix.) OR roll in Cinnamon Sugar

Sugar Popcorn
Sugar Popcorn by Pebbles and Piggytails, which I made a small change to by adding flavouring.
2 cups unpopped popcorn seeds
1 1/2 cups white sugar
4 Tablespoon water
1 Tablespoon butter
Food colouring and flavour drop of your choice
Pop seeds according to your choosing, I used a large thick base pot with very little oil and popped one cup at a time. You can air pop or pop in microwave.
In a saucepan add the sugar, water, butter, colour and flavour. Bring to boil, while stirring constantly. As soon as it boils, pour it immediately over popped popcorn, stir it around until all the popcorn is covered. Let it stand for a few minutes. The popcorn does not stick together. Just shake it around if you find it sticking..
Now since I did different flavours and colours I used 1 cup of unpopped popcorn seeds for every colour, which means I halved the recipe.

Horse Shoe Pastry (aka Pixies)
We have some amazing lovelies on our Watalotwegot group on Facebook. And one such sweet lady is Bibi Ayesha. Whilst she runs her home deftly, she takes pride in her kitchen. We have been blessed by her sharing her culinary skills with us and most times Bibi Ayesha would share with us her 'Step by Step' pictures of a recipe she has been making for ages.
Being a bit of a sweet tooth myself, this one caught my attention, and I love these baked pastries. Shukran for sharing this with us Bibi Ayesha💕.
I have compiled, some of the images shared, into a collage but the Instructions are as received by Bibi Ayesha👌. It seems rather easy to follow and I do hope we have lots of you rushing to give this one a try. We look forward to all your feedback.👍

Pixies..or Horse Shoe Pastry
sweet and simple..
~ roll out pastry..thick
~ dab on water..sprinkle castor sugar properly..fold as per picture (1 + 2)..
~ dab on water..sprinkle castor sugar again..fold as per picture (3).
~ keep in freezer to chill.
~ slice and Dip only one side in castor sugar picture (4).
~ place that side up and open out ears. picture (5)
~ preheat oven 180 degrees Celsius and bake...
~when pink remove tray and immediately remove onto rack to cool.
~ leave in oven to crisp😀..enjoy..

Mini Rainbow Pavlovas

Mini Rainbow Pavlovas
Inspired by Donna Hays
Adapted by Sharona Dada
4 egg whites
1 cup (220g) caster (superfine) sugar
3 teaspoons cornflour (cornstarch)
1 teaspoon white vinegar
Gel food colours
whipped cream and fresh fruit, to serve
Preheat oven to 150°C (300°F).
Place the eggwhites in the bowl of an electric mixer and beat until soft peaks form. Gradually add the sugar, beating well until the mixture is glossy. Sift the cornflour over, add the vinegar and fold through.
Divide the meringue into 3 bowls and colour each one with a couple of drops of gel food colouring. Use a toothpick to add one drop at a time. Fold the colour in using a spatula.
Spoon the meringue into a piping bag and pipe as desired.
Place in the oven, reduce the heat to 120°C (250°F) and cook for 45 mins. Turn the oven off and allow the meringues to cool in the oven.
To serve, top with whipped cream and fresh fruit.

JALEBI BY RAZ💝
1 cup cake flour
2 1/2 teaspoon baking powder
1 Tablespoon ghee
1/2 cup inkomazi(yoghurt/maas)
Yellow or orange colour
SYRUP:
1and 1/2 cup sugar
1cup water
2 teaspoon lemon juice
Bring to the boil until syrup string forms or to the touch when you feel it's sticky enough.
Mix all ingredients..
Form spiral shape directly into hot oil...fry..
dip in syrup and serve...
enjoy.

WATERMELON SORBET
(ZAHIRA SALEJEE)
6 cups deseeded melon
3/4 cup water
3/4 cup sugar
3 tbsp fresh lime juice
Bring sugar n water to the boil for abt 6-8 mins, then lower to a simmer. Switch off n leave to cool for an hour.
Blitz melon n lime juice together, add in sugar syrup and blitz till combined.
Freeze in container and give it a stir every hour, till its frozen. Then enjoy.

Koeksister
There are always a few recipe requests that ladies are looking out for, and the Best shares would be ones that have been Tried and Tested.
Like these Koeksister...Doesn't these look divine😍. Yet another of many South Africans favorite sweet treat.

Koeksister (By Fatima Sydow)
My moms Koeksister recipe
Ingredients
4&1/2 cups of cake flour
1& 1/2 cups of lukewarm water
1 tsp of baking powder
1 sachet of Instant yeast
1 tablespoon of sugar
3 tbsp of butter( melted)
1 tsp of salt
1 cup of soft mashed potatoes
3 teaspoons of grinded or finely chopped dried naartjie peel
1&1/2 tablespoons of freshly grated Ginger ( makes all the difference )
1 teaspoon of mix spice
1 teaspoon of aniseed
2 teaspoons cinnamon
1/2 a teaspoon of freshly grounded cardamon seeds
Oil for deep frying
Sugar and stick cinnamon for sugaring
Fine coconut
Method
Mix all ingredients together with warm water ( add water until you get a sticky dough ) dough must be very soft/ almost wet .Knead dough for 10 minutes using a little oil on your hands to stop from sticking, rub some oil over dough , cover with cloth and allow to rise for an hour or when double in size . Roll out into little ball shapes and fry in oil on medium to high heat until dark brown . Sugar and cover with fine coconut .
Sugar water
Boil 3 cups of sugar with 3 cups of water and a few cinnamon sticks for about 35 minutes on high heat ...then simmer when sugaring the koeksister.
Makes about 40 koeksisters
Please note - Its very important to not have a dry and tight dough . It must be almost sticky - if your dough is tight your yeast won't have anywhere to expand , resulting in a dense and dry koeksister .

Vanilla Cupcakes with Caramel Cream

Vanilla cupcakes with Caramel Cream:
2 and half cups flour, 2tblsp baking powder, 2 cups sugar, 2 tsp vanilla essence, 1 cup water, 1 cup oil, 8 egg's separated.
Method: sift flour, baking powder, sugar together, add the oil and water and beat until well combined. Add in vanilla and egg yolks and beat well. In another dish, beat egg whites until stiff peaks, then fold into batter. Fill 2/3 ccupcake cases and in preheated oven at 180degreed until done, takes about 10-15mins. Place on wire rack to cool.
Caramel Cream:
1tin caramel treat, 500ml fresh cream, 2 Tblsp icing sugar, 1tsp maziena. Caramel cream: beat cream until soft peaks form, den add 2Tblsp of icing sugar and 1tsp maziena and beat until stiff( beat about a minute or less after maziena is added or until stiff, bt dnt over beat). Leave in the fridge for 1hour. Then add 1 tin of caramel to the cream and fold it in a few tyms, u want it swirled into the cream. Pipe onto cupcakes. Optional: Spoon a little caramel in the middle of the cream. I filled the cupcakes with a little caramel by filling a syringe wit caramel and inserting frm under the cupcake.
