CRAB CURRY (DURBAN STYLE)

Seafood is a popular protein enjoyed by many.  And there is just something about the way, people living along the coast prepare seafood.  Surekha shows us how to make Crab Curry, just like the Indian Durbanites do.

A Spicy and Delicious meal, that will leave you licking your fingers.  *Note, best have some kitchen towels at the ready, when you tuck in*

CRAB CURRY

Ingredients
2 kgs CRAB
2 large onions sliced
6t o 8 large tomatoes grated
1 teaspoon crushed ginger and garlic
1 tablespoon kashmiri chilli powder
2 tablespoons mix masala
Salt to taste
12 green chillies
2 teaspoons liquid tamarind
Method:
~ Fry onions in 2 tablespoons oil until translucent 
~ add green chilli tomatoes and all the spices and tamarind cook on high stirring continously for approximately 5 minutes 
~ add crab and salt stir cover and simmer for about 40 minutes 
~ after 40 minutes add half a cup of water and simmer for another ten minutes . 
~ Remove from stove and garnish with coriander

Coffee Tart

COFFEE TART

Ingredients:

Base Ingredients:
250g Nuttikrust or Tennis biscuits, crushed
90g Stork Bake margarine, melted

Filling Ingredients:
1 tin evaporated milk 
2 egg yolks
4 tsp instant coffee dissolved in 1 dessertspoon boiling water
3 tbsp cornflour
3/4 cup brown sugar
60g Stork Bake margarine

To Decorate: 
Whipped cream

Method:

Base Method:
Mix the melted Stork Bake margarine and biscuit crumbs.
Line the base and sides of a greased pie plate.
Place in fridge to cool.

Filling Method:
Warm the evaporated milk, egg yolks and coffee in a saucepan.
Add the cornflour mixed with ½ tin cold water. 
Dissolve the sugar and Stork Bake margarine, add to the milk mixture and heat it, stirring all the time until it is thick.
Pour into biscuit shell and chill.
Decorate with whipped cream.
Tip: Keeps well in the fridge if covered with Klingfilm

Homemade Beef Patties

Holidays are almost upon us in South Africa.  Time to practise some easy, homemade Beef patties, that would prove a hit with your kids.  Take a look at this recipe, kindly shared on by Raeesa Abdool Carim, one that has already been tried and tested by a few other group members as well.  A must try.


Homemade Beef Patties by Raeesa Abdool Carim
(WATALOTWEGOT)

1 kg beef mince
Season with salt, 

pepper, 
aromat, 
dried parsley, 
italian herbs and 
peri peri spice. 
Add ginger garlic, ground green chillies, dhania (Coriander) and 1 egg. 

Mix and form into patties and keep in fridge. 
Remove from fridge about 30 mins before cooking. 
Add a little oil to frying pan and fry on meduim heat.

*Note*, Adjust spice amounts according to requirements

Almond Chicken

Hmmmmm...I've been left drooling as I sift through posts on the WATALOTWEGOT Facebook group. So spoilt for choice when it comes to "WHAT TO COOK" dilemma.

With this post, Sumayya Adam, makes this daily dilemma, a little bit easier, by sharing with us her pic and the recipe she tried out. THANKS STACKS Sumayya, WE HEART IT!!!

Almond Chicken

1 CHICKEN CUT INTO 8 PIECES
2 TABLESPOONS LEMON JUICE
2 BIG SPOONS TOMATO SAUCE
2 BIG SPOONS MAYONAISSE
A BIT OF GROUND ELACHEE (CARDAMOM)
3 TEASOON RED MASALA
1 TABLESPOON COURSE DHANA (COURSE CORIANDER)
1 TEASPOON SALT
2 TABLESPOON GROUND ALMONDS (HEAPED)
1 TEASPOON FRESH GROUND RED CHILLES (IF NEEDED)
FEW STEANDS OF SAFFRON
2 TABLESPOONS WAGAAR (OPTIONAL) -(FRIED ONIONS)

~ MARINATE FOR A FEW HOURS.
~ HEAT 3 TABLESPOONS BUTTER, ADD A FEW CINNAMON STICKS
~ ADD CHICKEN.
~ COOK and LEAVE SAUCY.
~ CAN ALSO PUT A FEW PICKLING ONIONS AND BABY POTATOES IN THE COOKING OR SERVE WITH STEAMED VEG
Note: I don't follow measurements as above, I add garlic masala n ginger garlic masala, and extra garlic and if I want more strong I add red fine chilies and rough red chilies as well.. I don't use fine badaam, I used sliced badaam

Smoked Chicken Tikka Bites

Summer weather calls for easy and delicious meals.  Fatima Jada, shows us how to do just that, in her post she recently shared on our WATALOTWEGOT Facebook Group.  WE HEART IT Fathima, SHUKRAN for sharing this with us.  Do give this a go, and drop us a feedback if you try it.

SMOKED CHICKEN TIKKA BITES
RECIPE AND PIC CREDIT: FATIMA JADA (Watalotwegot)

Marinate chunks of chicken in the following 
For 4 pieces of chicken fillet
Salt to taste

1 teaspoon Lemon pepper
2 teaspoon Lemon and herb BBQ spice 
2 teaspoon Tandoori spice 
1 Tablespoon Lemon juice
3 Tablespoon Yoghurt. 
Half teaspoon chilli powder if you prefer it spicier
Dash of oil


~ Push onto skewers and shallow fry in ghee/oil on medium heat till done.
~ Place a small foil container in the centre of the frying pan. 

~ Place a red hot coal into the foil and drop a spoonful of ghee onto the coal.
~ cover immediately with foil and allow to smoke for ten minutes. Enjoy

Flamby/Creme Caramel

Nothing beats a good old fashioned dessert...

FLAMBY /Creme Caramel

1 litre full cream milk
1 Tin condensed milk
1 tin of nestle cream
2 tablespoon maziena (corn flour)
3 tablespoon custard powder
2 teaspoon China grass powder
1/4 cup of water
1 teaspoon caramel essence
And golden syrup for the bottom
~ Bring the milk and China grass powder to boil. 
~ Add the custard powder and maziena to the the 1/4 cup water and stir well. 
~ Now add this to the milk and switch stove to low heat and allow mixture to thicken a bit. Be careful not to scorch the bottom of the pot. 
~ Remove from heat and using a whisk add the condensed milk, nestle cream and essence. 
~ Now put some golden syrup in the bottom of your dish about 1 tablespoon of syrup for one small individual mould/ramekin. Add more syrup if you doing it in a bigger mould. 
~ And pour the hot FLAMBY custard over. Refrigerate until set. 
~ To serve, loosen around with a knife to release the vacuum and turn over onto a plate. You don't have to turn these over. You can serve it straight from a ramekin.
* Please note that the nestle cream is optional. You can omit it from recipe as is. All it does is give a rich creamy taste to the desert. Also make sure when using China grass powder that it is fresh and not been sitting in your cupboard for a while. Your desert won't set firm if its stale.*

APPLE FRITTERS

2 cups flour
1/4 cup + 2 Tablespoon sugar 
2 teaspoon Baking powder
1 teaspoon salt
3/4 cup milk
2 Large eggs
2 Tablespoon melted butter
1 teaspoon vanilla essence
1/2 teaspoon cinnamon powder
2-3 sweet apples, peeled, cored & chopped (3 cups)


METHOD
~ Sift together dry ingredients in a bowl.

~ Whisk wet ingredients separately & 
~ Gently fold into flour mix until just combined.
~ Then fold in cubed apples.
~ Fry on medium heat till light to golden brown. 
~ Cool, dust with icing sugar. ...ENJOY

PECAN AND ALMOND PIE

This Decadant dessert recipe, and pic credit goes to Shamshaad Gani, Who kindly shared this with us.  Sweet tooth that I am, This is one dessert I would love to try.

Pecan & Almond Pie :
Shamshaad Gani

Pastry case:
125 gr butter
2 T icing sugar 
1T lemon juice 
Rind from 1 lemon
3T cold water 
2 cups flour 

Method 

Rub butter & flour in . Add other ingred . Mix well . Knead 
Roll on a well floured surface . Roll 2 rounds Line 2 pie pans/ small spring form pan . 
Use spray & cook . Place the rolled out dough into the pans . Prick with a fork . 
Bake blind on 170*c for +- 15 min. Set aside .

Pecan & Almond Filling : ( quantities are per pie ) 

1/4 cup water
3T brown sugar
3 T maple syrup 
10 fresh dates ( the frozen variation) mashed
3 T butter
3 T desiccated coconut 
3 T raw nibbed almonds
3 T chopped pecan nuts
1 t cinnamon pwd 
1/4 t nutmeg 
1/4 t salt

Boil water , dates,sugar , salt,syrup & butter 
Allow to boil rapidly for 5 min . Add in coconut, pecans & almonds. Cook for 1 min . Set aside 

Pour filling into pie crust . Bake for 10 min on 170•c . Remove from oven . Top with pecans & almond . Sprinkle lightly with brown sugar & cinnamon pwd . Bake for a further 15 min . Cool . Remove from pan & serve with whipped fresh cream 

NOTE
* T = TABLESPOON
* t = teaspoon
* gr = Grams

SWEETCORN BHAJIAS/FRITTERS

Colder days due to a sudden cold front pattern in South Africa, called for some warming snacks.  This is my personal favourite, and my own recipe I have shared many a times on different platforms.  Surprised that I haven't posted it here before...but better late than never!!!

Sweetcorn Bhajias/Fritters

Servings: Makes about 18
Difficulty: Easy


1 Cup All-Purpose Flour
1 and 1/2 Teaspoon Baking Powder
1 Teaspoon Salt
1/4 Teaspoon Turmeric Powder
3/4 Teaspoon Cumin Powder
2-3 Green Chillies (Chopped)
1/2 Large Onion (Finely Chopped)
2-3 Tablespoon Fresh Coriander (chopped)
1 Egg (lighlty beaten) 
3/4 cup Creamstyle Sweetcorn

Instructions
~ Add all the ingredients into a large enough mixing bowl
~ Heat oil on medium heat, and while this heats up, simply mix all ingredients together, until a thick batter forms. 
~ Do Not Add any liquid, As the batter will form with the creamstyle sweetcorn and beaten egg. 
~ When Oil is hot enough, drop in small scoops of batter into oil and fry until golden in colour. 
SERVE HOT WITH YOUR FAVOURITE CHUTNEY/SAUCE

MANDARIN AND BEETROOT SALAD

Something fresh and healthy... We have all kinds of delicious recipe shares on our WATALOTWEGOT group.  How amazing does this Salad look.  Ayesha Randeree is a published Author, and she kindly shares some of her ideas with us.  Now on this post she shares this salad idea, it may not have exact amounts of salad stuff, BUT it is entirely up-to each individual to add as much or little of certain salad ingredient.  THANK YOU for sharing this with us AYESHA💞



Mandarin and Beetroot Salad 

(Ayesha Randeree) -Via WATALOTWEGOT

Baby gem lettuce
Boiled beetroot spirals
Carrot spirals
Cucumber spirals
Mandarin Peel and skin
Feta cheese cubed
Dried cranberries
Toasted slivered almonds

Orange vinaigrette

1/4 cup freshly squeezed orange juice
Salt to taste
1/4 tsp crushed black pepper
2 tblsp veg oil
1 tsp honey

Whisk together and pour over salad just before serving

Place gem lettuce onto platter
Top with beetroot, cucumber, mandarin And feta
Top with toasted almonds and dries cranberries


Coconut Mint Cake With Caramel and Chocolate Ganache

Who doesn't like BAKING!!! And even if you were not a baking fan, Just looking at this delicious Coconut and Mint cupcakes, will entice you enough to reach for those whisks, to whip up a batch.  This recipe and pic credit goes to one of our Admins, Bibi Ayesha, and she shares with us an old family favourite in her home.

Coconut Mint Cake
With Caramel and Chocolate Ganache

my mums golen oldie recipe
Makes 24 cup cakes
Or use a cake pan
Pre heat oven to 180 degrees Celsius 

125 g butter..room temperature
1 cup castor sugar
1 cup coconut
1 and half cup cake flour
3 quarter cup milk
3 eggs ..beaten
2 and half tsp baking powder
1 tsp peppermint essence
Half cap of green food colouring

~ Cream the butter and castor sugar well
~ Beat the eggs in a bowl first ..i prefer that
~ Then add slowly little at a time and beat well
~ Sift flour and baking powder into a bowl
~ Add the essence to the milk
~ And the food colouring
~ Add in the dry ingredients alternating with the milk..lastly add in the dessicated coconut
~ Mix nicely with a spatula

~ Spray the pan or cup cake pans well
~ Scoop mixture into the pans
~ Put into pre heated oven and bake till golden brown
At least 20 min
~ Remove trays from the oven
~ Take out the cakes on a cooking rack..cool well

Topping
1 slab of cadburys dairymilk or mint top deck chocolate
5 tblsp caramel treat
4 tblsp nestle cream
Or fresh cream
First melt chocolate..i use a microwave
Add in the caramel treat and mix well
Add in the cream and mix till smooth
Grate peppermint chocolate of choice..i used peppermint crisp

Add the topping on the cakes..and sprinkle grated chocolate over
Enjoy

Punjabi Kheema Samoosa

I've always wanted to try a Punjabi Style Samosa pastry, and with the recipe share by Another go our Admins, Amina Wackie Sheik, I think I will give it a go sometime.  Have you tried this Punjabi styled samoosa before, do drop us a comment.


Punjabi Kheema Samoosa

Samoosa pastry

Wraps:
1) 4 cups cake flour
2) salt to taste
3) 1 tsp baking powder
4) half cup oil
Make a dough with luke warm water
Leave aside for 15 minutes...
Drizzle obe n half tblspoon oil n knead well
Make 20 balls ftom tge dough keep it covered

Filling recipe
I used is from Fauzia Kitchen Fun..
Only thing I added was mint

Ingredients
1 kg minced meat
(Beef mince will taste best but I like to mix mutton/lamb and beef half-and-half, you can even use chicken mince if you want)
1/2 kg onions, chopped finley
(you can reduce one or two if you find it too much, some people prefer less onions)
1 Tablespoon 
dhana jeera

1 Tablespoon ground jeera
1 teaspoon garam masala
1 teaspoon turmeric powder
1 bunch of fresh coriander, chopped
juice of 1 lemon
1 teaspoon garlic paste
1 teaspoon ginger paste
salt to taste
2-3 green chillies, chopped
1 Tablespoon butter


Instructions 


Place your mince in a deep pan, add the ginger, garlic, chillies, salt, spices, half of the coriander and half of the lemon juice.

Dry the mince on medium heat whilst stirring constantly to avoid it forming lumps. Make sure you dry it completely, if it sticks a little in the pan, that's fine....it will make the mince taste better.

Whilst the mince is still hot, add the chopped onions gradually and mix it in on low heat. You can add a touch of turmeric to change the onions color. Do not over-cook, just stir the mixture around for about 3 minutes and switch off. If you over-cook the onions they will release water and your mixture will become soggy, it needs to stay dry. After you turn off the heat, add the Tablespoon of butter, the remaining coriander, some garam masala and the remaining lemon juice.

Mix the lot together, the mince's heat will melt the butter and release the lovely aroma of the coriander and garam masala, make sure it gets mixed in thoroughly. Adjust salt and chilies. And you're done! :)

Make filling first and leave to cool before filling.

Chana Chutpatti

A lovely Vegetarian Meal option, is this Chana Chutputti.  This recipe and Picture was kindly shared by Bibi Ayesha Kadwa, who is also one of the admins on our WATALOTWEGOT group.  Simple and bursting with flavour.  Do give it try, we look forward to hearing from you. 

Sunnyside Classics 
Bibis Style...Chana Chutpatti

(chickpeas in gravy..served with fried samoosa purr and Tamarind salsa)

Oil..salt ..and chopped Onions
4 to 5 garlic grated or 1 teaspoon crushed
1 whole dry red Chillie
Make wagaar pink
Add 1 teaspoon chilli garlic masala
1teaspoon crushed red chilli
Half teaspoons mix masala
Half teaspoon turmeric
Add half teaspoon mustard seeds
1 teaspoon dessicated coconut last.
Curry leaves


Braise well and add in the 1 and half cup tomatoes. .

mix well and leave to cook.
Add in the chickpeas. mix well. leave to boil and reduce.

I removed some chutney to freeze.
Add 2 tablespoon Tamarind pulp.
Add half teaspoon GARUM MASALA
Chopped Dhania and whole green chillies 


Fry samoosa offcuts
Make Tamarind salsa
Strain Tamarind water..chop in onions and green chilli and dhania..serve in bowls.
I used canned chickpeas..quick and easy..drain and rinse then use.




Creamy Chicken Corn Soup

Oh My Word.... I Know, I Know...Seems like I froze up with the colder weather months in South Africa, Since I Last posted.  Well I'm back, Thawing myself, hehehe, And What better way to warm up, than a delicious bowl of warm and hearty soup.

CREAMY CHICKEN CORN SOUP

Ingredients:
•60g butter
•¼ cup flour
•1 liter milk
•1 liter water
•1 packet Knorr thick veg soup
•250ml fresh cream
•1 tin creamstyle sweetcorn
•500g cooked salt+pepper chicken fillet (cubed)
•2 whole green chillies (slit longwards)
•Salt (to taste)
•White pepper (to taste)

Method:
1. Melt butter in pot, add flour and whisk to make roux for white sauce.
2. Add ½ amount of milk and water and whisk until becomes a thick mixture.
3. Add in fresh cream, corn, chicken and packet soup. Mix in.
4. Then add in remainder milk, water chillies and allow to come to a boil.
5. When thickened to consistency you desire, remove from heat and serve with crusty bread.

FRIED MASALA FISH


EASY AND DELICIOUS, This Fried Masala Fish is always a hit in many Indian Family's homes.  Perfect to enjoy as is, or Paired with your favourite vegetarian dish, like Dhal, this will soon become a firm favourite in your home too.

Fried Masala Fish

1kg fish
Add following ingredients to the fish and marinade for an hour 
2 teaspoons aromat original flavour
2 minced cloves of garlic
3 tablespoons of lemon juice
2 teaspoons crushed red chillies (optional)
2 teaspoons chilli powder
1 teaspoon turmeric powder
1 teaspoon freshly ground black pepper
Fry fish approximately five to seven minutes per side in shallow oil. Add salt to taste

RASHIDAS PERI PERI CHICKEN

NOW WHO DOESN'T ENJOY SPENDING THE LEAST AMOUNT OF TIME IN THE KITCHEN???

This PERI PERI CHICKEN recipe will give you just that, time to rest, because this is a quick and easy meal to prepare.

PERI PERI CHICKEN

1 whole chicken...disjointed
1 tablespoon ginger garic paste
1 tablespoon red chilli paste
3 tablespoon steers garlic sauce
2 tablespoon steers peri peri sauce
3 tablespoon mustard sauce
Salt to taste
3 tablespoon melted butter

Mix all the above in a bowl...mix well taste if more sauce is needed. Smear chicken well, leave to marinate few hours or overnite for better results...
Cook in a pot for few minutes and transfer in a hot oven ...to grill

SWISS ROLL

A simple yet delicious bake to make anytime of the year, This swiss roll will become your family favourite too.

SWISS ROLL (flop-proof)
RECIPE CREDIT: UNKNOWN

4 eggs
1/2 cup caster sugar
1/4 cup flour 
1/4 cup cornflour
1/4 cup cocoa
1 t baking powder
1 t vanilla essence
Pinch of salt 
Beat eggs until stiff and white
Add sugar and beat until it leaves a peak
Sift the dry ingredients 3 times and sift in one more time into the egg mixture and fold with a metal spoon
Lastly add vanilla essence
Pour into a greased and lined Swiss roll pan and bake at 200•C for 10-15 minutes
Turn out immediately onto greaseproof paper sprinkled with caster sugar
Peel of lining paper and trim edges with a sharp knife
Roll up cake with paper in between to make a Swiss roll
Cover with a cool damp cloth and cool slightly
Unroll and spread with filling and roll up again and allow to cool 
# for Vanilla Swiss Roll OMIT cocoa
