BUTTERY CALABASH

Bibi Ayesha, an admin on our Watalotwegot group, Shares with us this rather simple dish.  But don't be fooled, as this simple fuss-free dish, makes for a wonderful side dish.  So Why not add it to your dinner table soon, would be perfect with grilled meats, fish or even all on it's own for a "Meat-Free" day. 
What is Calabash...for those that do not know, it is better known as "Bottle Gourd" or "White-Flowered Gourd". Next time you pass this in the Vegetable Aisle of your supermarket, grab one, so you too can give this recipe a try.


Sunnyside Classics

Buttery Plain Calabash

~ 1 large or 2 small/medium calabash
Peeled and cut into chunks
~ Put into a pot
~ Add salt..not too much 'cos the butter has salt too..rather add less and adjust later
~ Quarter teaspoon pepper
~ 4 to 5 tablespoon butter..or more if you dare..lol
~ Add quarter cup of water
~ Cook on low till calash is soft
~ Do not let all the water burn out
~ Leave some of the buttery juices
Enjoy as a side dish

Crumbed Mushroom

A perfect Appetiser or a Side dish to any meal.  Crumbed Mushrooms is a definite winner.  And look at how delicious these look😍

Crumbed mushrooms..

1 punnet mushrooms... 
1 egg..
1/2 cup cake flour..
3/4 cup crumbs..
1 teaspoon aromat..
1/2 teaspoon salt..
1/2 teaspoon chicken spice..
1/2 teaspoon fine red chillies

1/2 teaspoon pepper.

 Wash and dry mushrooms..

Roll mushrooms in cake flour

..dip in egg..

mix all spices wth crumbs and dip mushrooms in crumbs.

I used cornflakes as crumbs..
Fry in hot oil for two min, serve with Tartar sauce

Tartar sauce
Half cup yogurt...2 Tablespoon mayo..1Tablespoon fine diced onion....parsly..salt

Veggie Bake




Sometimes you should Just Go With The Flow!!!
Like Sameera did with this Veggie Bake, with no specific recipe, she simply put these ingredients together, and the outcome was Fantastic.  Her family thoroughly loved this bake, and today she shared with us her way of making this.  Do give it try and look forward to your feedback.

Recipe for Veggie Bake

How To:
Cut up potatoes in wedges and fry
Cut Butternut into big chunks and  steamed with salt
Steam Mix veggies with salt then braise with jeera and butter.
Tomato cut in rings 
Cut onion into rings and Fry

Next layer wedges at the bottom of casserole, then mixed veggies, butternut, fried onion rings and tomato on top.
Placed blobs of butter on top and bake in oven for 15min.
Once done sprinkle the top with crushed cheese and onion chips
serve with grilled chicken.

Tamarind Brinjal

A wonderfully easy dish to try for Vegetarians, OR non Vegetarians;-)
*Brinjal = Egg Plant

Tamarind Brinjal (Egg Plant)

1 onion sliced
2 tablespoons of tamarind (extracted from pulp dissolved in water)
1 tomato diced
salt to taste
2 green chillies
1 teaspoon chilli powder
2 large brinjals chopped
fry onion in two tablespoons oil and a teaspoon of butter ghee
add brinjal with spices tomatoes tamarind salt nd chillies and 2 potatoes cubed . reduce heat and cook on low until potatoes are cooked.

Exotic Aloo Fry

Another wonderful share by dear Umme Abdullah, adding a bit of a twist to a regular Indian dish.  now for those not in the know, "Aloo" is an Indian term used for Potatoes.

This is a simple, vegetarian dish, and we hope you do give it a try, and  Do remember to give us feedback once you have tried.

Exotic Aloo Fry
Ingredients:
Potatoes
Brinjals
Red peppers
Green peppers
Yoghurt
Green masala
Sliced garlic
Slit green chillies
Sesame seeds,mustard seeds,curry leaves
Dhania
Method:
1.Slice veggies in seperate dishes n spice ea as u would for aloo fry (i add salt,red chillies,tumeric n dhania jeero)
1. Heat sum oil in a fryin pan n add sliced potatoes.Fry as you would aloo fry.
2. Empty into an oven proof dish
3. Now do the same with brinjals and layer over potatoes.
4. Then red n green peppers and this will go over brinjals.
5. Seperately,add some green masala to a small tub of plain yoghurt.
6. Drizzle the yoghurt over the
 peppers.
7. In a small frying pan,heat some oil and add the following:
Sliced garlic (2-3 cloves)
Slit green chillies (3-4 whole)
Curry leaves 
Mustard seeds,jeera,sesame seeds.(1 tsp each)
Fry until light brown in colour.
Sprinkle over the yoghurt.
Can be made in advance.
When ready to serve,either place in oven on 180 deg for approx 10 minutes.Make sure to cover with foil..Do not leave too long in oven as yoghurt could curdle.To be safe heat in microwave.
Garnish with chopped dhania and serve.
