Ayesha's Sizzling Chicken Tikka

Ayesha's Sizzling Chicken Tikka
2kg chicken quarters
1 tablespoon ginger garlic
1 tablespoon chilliepowdr
1 tablespoon garam Masala
1 tablespoon lemon juice
Salt to taste
1/4 cup yogurt
1/4 cup Aminas Tikka Paste 
Marinate for 2 hours, then grill in oven
I served with Naan and Masala Chips

Polo Mustada

POLO MASTADA

Chicken fillet sliced.
Marinate with 1tblsp red ginger garlic masala , 1 tsp salt, 1/2 tsp Arad , crushed red chillies ( to taste ). Cook until done.
Braise in little oil. Set aside.
Slice brinjal thinly . Fry until crispy, season with salt and pepper. Leave aside.
Melt butter in pan, add mustard seeds and fry sliced mushrooms.
Make a thick cheese sauce with fresh cream , maizena , salt , pepper, grated cheese.

Layer on serving plate Chicken then mushrooms then brinjal slices and then top with cheese sauce.

Nb: I added crushed garlic as well to the Chicken marinade. And I add ghee and oil to Chicken whilst cooking and a little water. I marinate my brinjals in salt , dhunia jeero , fine red chilli powder and oil. For the sauce I take one fresh cream, abt half cup milk, 2 -3 tsp maizena and about one and half cup cheese, salt and pepper.

Veggie Bake




Sometimes you should Just Go With The Flow!!!
Like Sameera did with this Veggie Bake, with no specific recipe, she simply put these ingredients together, and the outcome was Fantastic.  Her family thoroughly loved this bake, and today she shared with us her way of making this.  Do give it try and look forward to your feedback.

Recipe for Veggie Bake

How To:
Cut up potatoes in wedges and fry
Cut Butternut into big chunks and  steamed with salt
Steam Mix veggies with salt then braise with jeera and butter.
Tomato cut in rings 
Cut onion into rings and Fry

Next layer wedges at the bottom of casserole, then mixed veggies, butternut, fried onion rings and tomato on top.
Placed blobs of butter on top and bake in oven for 15min.
Once done sprinkle the top with crushed cheese and onion chips
serve with grilled chicken.

Fish Cakes

With just a few ingredients, Ayesha turned out these wonderful looking Fish Cakes.  These would be great served as a starter/savoury with a salad.  Maybe even a Lunch option for kids and adults alike. Take a look at this pic, delicious looking is it not?,  find recipe below.

Fishcakes 

2 tins tuna,
5 slices of bread,
daniya(coriander), finely chopped 
green chill( optional or to taste)i,
1 egg,
salt 
1 onion (chopped)  
A Little breadcrumb 

Combine all of the above, carefully shape and fry in hot oil.

Custard Cake

hmmmm....A delightfully colourful Cake😍

A definite must try if you want to have both custard and cake for dessert/tea-time treat. Thank You for sharing your pic and recipe used with us Nazrina💞

CUSTARD CAKE- NAZRINA JOOSUB

Cake:
2 cups flour.
2 tsp baking pwd

1/4 lb butter. (125 grams)
3/4 cup sugar.
Beat the above in a machine until it resembles bread crumbs.
Whisk 2 eggs with 1 tsp vanilla essence & add to the mixture. 1/4 to 1/2 cup milk. Add in slowly to form dough. Dough must be firm like that of roti. Make 7 balls. Roll each 1 out like a roti. Not too thin. Bake each for about 7 minutes. Stack with nice rich custard.( 3 colours)

CUSTARD:
1 L milk
4 Tblsp custard pwd mixed in milk
3/4 cup sugar
1 tsp vanilla essence
1/2 tin condense milk
Boil milk. Remove from heat. Add custard and stir till thick. Add vanilla essence, sugar n condense. Boil till thick. Cool. Mixture must not be very thick. Divide into 3. Colour 1 with pink colour & 1 with green colour. Make layers using the cake & different coloured custard. End with custard on the top. Pour Nestle Cream over(optional). Crumble 1 cake on the last layer. (Nazrina Joosub)



Tamarind Brinjal

A wonderfully easy dish to try for Vegetarians, OR non Vegetarians;-)
*Brinjal = Egg Plant

Tamarind Brinjal (Egg Plant)

1 onion sliced
2 tablespoons of tamarind (extracted from pulp dissolved in water)
1 tomato diced
salt to taste
2 green chillies
1 teaspoon chilli powder
2 large brinjals chopped
fry onion in two tablespoons oil and a teaspoon of butter ghee
add brinjal with spices tomatoes tamarind salt nd chillies and 2 potatoes cubed . reduce heat and cook on low until potatoes are cooked.

Nandos Chicken

Now there is NO GOING WRONG, when Nandos Chicken is on the Menu!

What is Nandos some may ask, well it is a Portuguese brand of restaurants, which bring peri-peri flavours to their chicken, lip smacking tasty meals.

Here is a "home" version of this popular dish, Humarah had given the recipe a try, and had only positive feedback from her family and friends who thoroughly enjoyed this meal.

Nandos Chicken 
(Zarina Ally)

Ingredients :
1 chicken butterflied (or pieces)
1 tsp salt
1 tsp black pepper
2 tsp crushed garlic
2 tsp crushed chillies
2Tb oil
250 ml fresh cream
1 large bottle Nandos sauce of your choice

Method:
Preheat oven to 200C
Rub salt, pepper, garlic, chilli & oil for about 1/2 an hour until half way done.
Discard oil.
Mix the Nandos sauce with the cream & pour over the chicken.
Cook until done.

Mushroom Chicken

SIMPLY YUMMMMMMMM!!!

Mushroom Chicken - Mohsina Nosarka
Olive oil or butter
1 chopped onion
Mushrooms wiped and sliced
2 tbl tomato puree
1 cube of Chicken or veg stock
1 tsp garlic flakes
1 tsp mixed herbs
1 tsp veg spice
2 chopped green chillies
1/2 tsp salt
1. Saute the onion in butter.
2. Add the spices and braise.
3. Add the chicken, mushrooms and puree and cook until done. Add water as needed.
* Serve with roti or puri
* can also be served with sweetcorn gemsquash and honeyed vegetables.

DIY - Breakfast Idea

Stir through Peanut butter into warm cooked oats. Any nut butters may be used if you are allergic to Peanuts.(Foodeva Marsay)

Grilled Portuguese Chicken

WHAT TO COOK DILEMMA????
 fear not, why not give this recipe for Portuguese chicken a go, Shanaaz reckons her family thoroughly enjoyed this. Thank You sharing on with us Shanaaz💕



Grilled Portuguese Chicken

1 kg of chicken:
Half cup of Minnie's Portuguese Flame Grilled sauce
1 tab of HP Sauce
1/4 tsp black pepper
2 tsp of chillie powder
2 tab of lemon juice
2 tsp crushed garlic
Few dashes of soya sauce
1 tsp of fresh green/red chillie (optional)

Make slits in chicken marinate chicken with above.

I used an electric grill but the cooking in the oven should be fine.

Sauce:
1/4 cup of the same Minnie's Portuguese Sauce you used above
3 tab of lemon juice
2 tab of olive/regular oil
1 tab of butter

***melt altogether and use this as your basting and pouring sauce when chicken is done. (Shanaaz Ahmod)

Coconut Twists

Now Nasreen is one of many Star Bakers on Watalotwegot.  Her baking is superb, and she very kindly shares new recipes she likes trying out, like this Coconut Twist Biscuit.

Coconut Twists
3 cups flour
250g butter- keep aside quarter cup for filling
1egg
4tsp baking p
Half cup milk
FILLING:
1 and half cup coconut
1 and half cup sugar
Quarter cup butter
Rub butter into flour and baking powder until breadcrumbs
Beat egg and milk
Make into biscuit dough
Beat filling butter and sugar add in coconut n mix
Divide dough into 8 balls and roll out like roti
Divide filling into 6 portions
Using 4 rotis spread the tops of 3 keeping the top most free of filling
Cut small strips and twist
Repeat with other 4 rotis
Brush with egg and bake at 160

Exotic Aloo Fry

Another wonderful share by dear Umme Abdullah, adding a bit of a twist to a regular Indian dish.  now for those not in the know, "Aloo" is an Indian term used for Potatoes.

This is a simple, vegetarian dish, and we hope you do give it a try, and  Do remember to give us feedback once you have tried.

Exotic Aloo Fry
Ingredients:
Potatoes
Brinjals
Red peppers
Green peppers
Yoghurt
Green masala
Sliced garlic
Slit green chillies
Sesame seeds,mustard seeds,curry leaves
Dhania
Method:
1.Slice veggies in seperate dishes n spice ea as u would for aloo fry (i add salt,red chillies,tumeric n dhania jeero)
1. Heat sum oil in a fryin pan n add sliced potatoes.Fry as you would aloo fry.
2. Empty into an oven proof dish
3. Now do the same with brinjals and layer over potatoes.
4. Then red n green peppers and this will go over brinjals.
5. Seperately,add some green masala to a small tub of plain yoghurt.
6. Drizzle the yoghurt over the
 peppers.
7. In a small frying pan,heat some oil and add the following:
Sliced garlic (2-3 cloves)
Slit green chillies (3-4 whole)
Curry leaves 
Mustard seeds,jeera,sesame seeds.(1 tsp each)
Fry until light brown in colour.
Sprinkle over the yoghurt.
Can be made in advance.
When ready to serve,either place in oven on 180 deg for approx 10 minutes.Make sure to cover with foil..Do not leave too long in oven as yoghurt could curdle.To be safe heat in microwave.
Garnish with chopped dhania and serve.


Grilled Prawns

A simple yet delicious seafood dish worth giving a try.  Thank You for sharing on Zakiyya.


Grilled Peri Peri Prawns

125 g melted butter.
1 tsp crushed black pepper.
1 tsp fine red chillies.
3 tablsp peri-peri oil
1 tblsp crushed garlic.
3 tblsp lemon juice.
1 1/2 tsp salt
Marinate prawns with the above for a few hours. Then put into pan n cook on high until water burns. Add sauce and grill for a bit. I didn't grill. 
Sauce:
to the left over marinade add
3 tblsp mayonaise.
1/4 cup tomatoe sauce
Give a quick boil before adding to prawns. Please note: I usually make double this recipe for 2kg prawns. Wash,clean and devein. Prawns with heads on or headless.
