Naan Khatay

Naan Khatay, for those that may be wondering, is a popular little Indian biscuit, that contain a bit of Semolina and flavoured with Cardamom.  These have been a firm favourite in many a home, be it during celebrations, or just a weekly bake to enjoy with a cuppa.

Today we Thank Aunty Zarina Assan ๐Ÿ’•, for sharing her family favourite recipe for this tea time treat.




Naan-Khatay (Zarina Assan - Watalotwegot)

1 cup ghee
3/4 cup castor sugar
1/4 teaspoon crushed elachi. ..
2 teaspoon baking powder. 
1 and 3/4 teaspoon bicarbonate of soda.
4 level Tablespoon cream of wheat (Semolina)
4 Tablespoon condensed milk..
2 yolks of eggs..
2 and 1/2 to 3 cups flour


~ cream ghee and sugar well..

~ add yolks of eggs...beat till fluffy..

~ add all the other ingredients except flour..

~ sifted flour add to the mixture carefully and make a biscuit dough but soft..

~ make into little ball place on baking tray ..press down half almond 

~ I stick with egg because it don't fall of the naan-khatay..

~ bake in 190 degree Celsius oven for 5 minutes, 
then switch down oven to 150 degree celsius 
and continue to bake for 20 minutes or until brown..

~ leave biscuit to crisp




Butter Chicken Pizza

 Butter Chicken Filling..can be used for pizza or pies(Jameela Sayed)

1kg chicken fillet cut up 

1 teaspoon salt

2 teaspoon garlic

1 teaspoon chillie powder

2 teaspoon tandoori spice

1 teaspoon jeera powder

1 teaspoon crushd dhania

Half teaspoon tumeric

Black pepper

1 onion sliced

sachet tomato paste

1/4 cup fresh cream

Lemon juice

Heat little oil and ghee ..braise onion

Add chiken and spices..braise well

Add tomato puree and cream

Cook till done and not very dry

2 cup flour
2 teaspoon baking powder
1 teaspoon salt
3 Tablepoon butter
1 egg
1 cup milk

Sift dry ingredients..rub in butter..make breadcrumbs
Mix milk and egg together .. make dough
Bake @180 for 25 min

For filling...filling of ur choice
Steers peri peri.. ,tomato sauce ...mrs balls sweet chillie sauce..green pepper choppd, mushrooms...more sauces over...cheese ..polony... lastly sprinke sum fresh dhania @Sayedjameela

*for butterchicken pizza
Mayo and chillie sauce
Filling 
Onion..tomato and peper chilies Mushrooms Cheese
Drizzle mayo and more sauce over
Sprinkle fresh dhania

Boiled Egg Bhajia

With every Ramadaan, we see different ideas and savouries that take on the spotlight.  This year seems no different from other years.  Aunty Tahera, shared with us how to make this EGG BHAJIA (Bhajia being a fritter), that is most unusual from the normal ones we are so used too.  Shukran for sharing this Aunty Tahera๐Ÿ’•

BOILED EGG BHAJIA

10 eggs boiled shelled and cut in half 
1 and 1/2 cup chana flour
Pinch of turmeric powder

1 teaspoon of cumin powder
Fresh coriander finely chopped 
Green chillies finely chopped
Salt to taste
1 teaspoon baking powder
Water to make dough to thin paste consistency 
Oil for frying

METHOD 
~ mix all ingredients and make thin paste. 

~ Dip egg and fry . 
~ Make sure to drip off the excess paste . 
~ Fry till golden brown.

Stuffed Parathas

An easy to make savoury dish, these Stuffed Parathas, with a Chicken Filling, will leave your family asking for more.  Zaibonisa was kind enough to share her results with this recipe, which she sourced from a book (Ramadan Delights).  When asked by another sister on the group, how it tasted? , Zaibonisa replied "Was very tasty, but I didn't make it strong because I got 2 little ones here" . 

So there you have it, a tried and tested recipe that is easily adaptable to suit your family. Do give this one a try, and we look forward to all your feedback and pics.



STUFFED PARATHAS 
(Recipe Credit- Ramadan Delights Book Picture Credit- Zaibonisa Cassim ๐Ÿ’•)

2 cups chick fillets cube
1\4 cup lemon juice 

1 teaspoon salt 
2 Tablespoon red masala 
2 teaspoon chicken spice 
2 Tablespoon tomato sauce
1 Tablespoon butter or ghee

DOUGH:
3 cups cake flour 
1\2 teaspoon salt
3 Tablespoon ghee
3 Tablespoon sour milk
1 1\2 teaspoon baking powder
1 Tablespoon fresh chopped greens
1 1\2 cup boiled water
Ghee for frying 


~ Place all ingredients for filling together in pot over medium heat until cook.
~ Remove and let cool 
~ Combine all dough ingredients in bowl add just enough water to form soft dough.

~ Divide dough in 12 balls, roll out forming circles.
~ spoon filling on top and cover with another circle, press edges and seal.
~ Fry in hot griddle turning several times using ghee as required until golden brown.

Pistachio and Lindt White Chocolate Cheesecake

STRESSED SPELLED BACKWARDS IS DESSERTS ...

and who wouldn't want to tuck into a slice of this heavenly looking dessert to forget all about the days stresses๐Ÿ˜. This delightful recipe was kindly shared on by Maseeha M. Boda, Shukran๐Ÿ’•

Pistachio and Lindt White Chocolate Cheesecake

BASE
Tennis Biscuits crushed
65g melted butter
Combine the two till you get a texture of wet soil
Pistachio nibs
press down into the base of your cheesecake pan..refrigerate till firm

CHEESECAKE
250g cream cheese softened
1 slab of lindt white chocolate melted
Condensed Milk
250ml fresh cream lightly whipped
1/4 cup nibbed pistachio
Green coloring

~Beat the cream cheese well..
~ add in cooled but still melted chocolate ..
~ lightly fold in whipped cream..
~ add in enough Condensed milk till you find it sweetened to your taste...
~ add in about 1/4 cup of nibbed pistachio and a little green coloring..
~ layer over biscuit base..
~ you can swirl through rose syrup if you desire..or add in a drop of rose essence to the mix..
~ let it set over night..
~ Enjoy well chilled..decorate with fresh rose petals and pistachios. Enjoy!

Horse Shoe Pastry (aka Pixies)

We have some amazing lovelies on our Watalotwegot group on Facebook. And one such sweet lady is Bibi Ayesha.  Whilst she  runs her home deftly, she takes pride in her kitchen.  We have been blessed by her sharing her culinary skills with us and most times Bibi Ayesha would share with us her 'Step by Step' pictures of a recipe she has been making for ages.

Being a bit of a sweet tooth myself, this one caught my attention, and I love these baked pastries. Shukran for sharing this with us Bibi Ayesha💕.
I have compiled, some of the images shared, into a collage but the Instructions are as received by Bibi Ayesha👌.  It seems rather easy to follow and I do hope we have lots of you rushing to give this one a try. We look forward to all your feedback.👍

Horse Shoe Pastry

Pixies..or Horse Shoe Pastry
sweet and simple..
~ roll out pastry..thick
~ dab on water..sprinkle castor sugar properly..fold as per picture (1 + 2)..
~ dab on water..sprinkle castor sugar again..fold as per picture (3).
~ keep in freezer to chill.
~ slice and Dip only one side in castor sugar picture (4).
~ place that side up and open out ears. picture (5)
~ preheat oven 180 degrees Celsius and bake...
~when pink remove tray and immediately remove onto rack to cool.
~ leave in oven to crisp😀..enjoy..

MINCE PARETHA

Age old recipes that stand the Test of Time, those are the recipes worth treasuring...

Zahira Salejee is most definitely treasuring her Grans recipe that was handed down the generations. We are so glad to have Zahira share with us this little treasure of a recipe, SHUKRAN💕

How Yummy does this Paretha look? A simple to make recipe, that you could fill with your own fillings, here Zahira used a regular Minced Meat filling that she uses for her Samoosa.   However it is the technique and the 'roti' that play just as an important role to pull this age old recipe together.
Here is how Zahira made this. (SHARED AS RECEIVED)

MINCE PARETHA

Its just :
1 and 1/2 cups flour,
1 tsp baking powder,
1/2 tsp salt,
a little ghee and
enough hot milk or water to make a soft dough.

* Divide into 4 balls and roll out each the size of a roti.
* For the filling use your basic samoosa  Mince, when it's ready add in
~ 2 egg whites mixed with a little yolk.
* Brush each roti with a mix of oil and ghee, top with filling and continue layering ending with the 4th roti on top.
* Brush remaning egg yolk and sprinkle thal/sesame seeds.
*Bake at 180 degree Celsius till golden.

Cheese Puffs

Recipe for Cheese Puffs #Watalotwegot

When you having a late night craving.. Perfect with a cuppa.

Cheese Puffs

1 cup cake flour
3/4 cup grated cheddar cheese
1/2 tsp salt
1 egg beaten together with  3/4 cup milk
1 TBS melted butter
4tsp baking powder
1/4 tsp Cayenne Pepper
Mix all ingredients together.
Place spoonfuls into greased pattie tins.
Bake at 240°C for approx. 10 minutes
