SAVOURY MUFFINS

Hmmm, The weather in my part of South Africa, makes me want to quickly whip this up.  I actually have tried this one before, It is Simple and delicious.  Humarah Assan, another of our Group Admins, has been sharing this recipe for years, and has become a firm favourite with all who have tried it.
A perfect Treat to pack away for lunch/lunch boxes, Or just as good with your morning tea.  WE HEART IT ... and it keeps with our #WANTNOTWASTENOT ideas...

Savoury Muffin

2 cups Self raising flour
1 tsp baking powder
Half tsp salt
1 Tblspn Italian herbs
1 egg
1 cup milk
Half can creamstyle sweet corn
Half cup oil
1 cup grated cheese
Sum pepper of ur choice cubed fine
Any left over chick, meat or steak
Method:
Mix all the above ingredients together. Greese a muffin tin. Add 2 dessert spoons of batter . bake at 180°c for 20- 25 mins
Note
The original rec was taken from another cooking group. It was an eggless savoury muffin. I tweeked it to my liking n came up wud dis. So if u r a vegetarian u can leave out d eggs n meat part. Also dat rec said mixed herbs but I used Italian herbs. It also said 3|4 cup milk but I felt it was too little so made it 1.

BRAISED VENISON FILLETS

Now Venison is not everyones choice, but there is always a 1st time to try something new.  If you are 'GAME' (wink, wink) ... then this is one recipe you should try.  Kindly shared by one of our Admins on group,  Bibi Ayesha, Who shows us how to turn this venison, into a delectable dish.

Braised Venison Fillets 
Sunnyside Classics

2 fresh fillets of Venison
At least 500g
Cut into medium slices
Marinate
1 tblsp garlic
1 tsp ginger garlic
1 tblsp Vinegar..i use white grape
Half tsp lemon pepper
1 tsp tevsn braai spice
Half tsp chilli pdr..or paprika
2 tsp rajah curry powder..mix masala
Salt or aromat..aBout 1 tsp
Mix well and leave to marinate
1 onion sliced
2 to 3 tblsp ghee
Makes lovely golden wagaar..set aside
2 to 3 large tomatoes
Put in a microwave for a few minutes
Remove and pull away the skin
Careful not to burn
Smash the tomatoes
In a heavy based pan
Add some ghee..u can use the ghee from the fried onion
Heat up and add in the meat
Fry on medium to high
Add in some curry leaves
When the water burns out and u get a sear add in the tomatoes and cook further
Last add in the fried onions
Sprinkle garum masala
Add whole green chillies
Chopped dhania
☀️☀️enjoy with hot rotis

Gravy Steak

Gravy Steak

500g Rump Steak Tenderized with mallet
1 onion sliced
1 - 2 tomatoes grated
1 tsp garlic
1 tsp Red Masala
1 tsp steak & chops spice
1 tsp Barbecue Spice
2 Tbs Steers Barbecue sauce (optional)
A splash of Soya sauce and Worcester
Sauce
1 tsp black pepper
A good sprinkle of Inna Paarman green onion, garlic & black pepper & cajun
3 Tbs tomato purée
1/2 tsp sugar
Salt to taste

Fry onions in oil until golden brown, then add steak and cook until juices of the meat go down, then add tomatoes and all the spices and the tomato purée. Allow to cook on low adding a little water to create a nice thick gravy. Serve with mashed potatoes and steamed veggies.

"This was certainly a winner in my home this evening, Thai Fish Cakes with Sweet Thai Chili Sauce. It was simply delicious, and the blend of flavour in both the fish cakes and the sauce was nothing short of amazing. You must try (Hubby complained of the burn 😊)" ~ Melanie~

THAI FISH CAKES

600g hake fillets
3 tbsp fish sauce
1 tbsp brown sugar
2 garlic cloves chopped
2 tsp grated ginger
250ml chopped coriander
3 tbsp red curry paste
Zest of 2 limes
1-2 tsp chili paste or chopped chilies
2 tbsp corn flour
1 egg beaten
1 bunch spring onions chopped, finely chopped
Oi for shallow frying

Process hake, fish sauce, sugar, garlic, ginger, coriander, curry paste, zest and chili in food processor for 20 seconds. Add cornfour and egg and bitz another 10 seconds. Do not over process. Transfer to mixing bowl and add spring onions. Mix till evenly combined. Rest in fridge for half an hour. Use wet hands and mix 2 tbsp mixture per patty – fatten slightly for even cooking. Heat large non-tick pan with 3 cm oil. Fry over moderate heat 3-4 minutes per side. Drain on paper towel.

SWEET THAI CHILI SAUCE

Ingredients
1/2 cup rice vinegar (or white vinegar)
1/2 cup white sugar (plus 2 tablespoons)
1/4 cup water
3 tablespoons fish sauce
2 tablespoons sherry (or Shaoxing Rice Wine)
3 cloves garlic (minced)
1 tbsp dried crushed chili
1 ½ tbsp cornstarch (dissolved in 3 to 4 tablespoons cool water)

Here’s how to make it -

Place all ingredients—except the cornstarch-water mixture—in a saucepan or pot. Bring to a rolling boil. Reduce heat to medium and let boil for 10 minutes, or until reduced by half. Reduce heat to low and add the cornstarch-water mixture. Stir to incorporate and continue stirring occasionally until the sauce thickens about 2 minutes. Then remove from heat and check seasoning.
