Shallot and Feta Savoury Muffins

For as long as I can remember...Aunty Shirin has been one of the 1st members on the Watalotwegot, And everytime she makes these savoury Muffins, they always look great. Makes me want to reach into that tin and grab one😉.

Shallot and Feta Savoury Muffins (Shirin Ameer).                           
2 cups flour
4 level teaspoon Baking Powder
1 teaspoon salt
Dash black pepper

1 egg
1/2 cup oil
1 and 1/4 cup maas (plain yoghurt)
1 teaspoon ground green chillie(optional)

3/4 cup chopped feta
1/2 cup chopped shallot

Beat togther egg, maas(yoghurt), oil and green chillie
Add dry ingredients, chopped shallot and feta.
If batter is too stiff, add little milk or maas/Yoghurt and mix
Spoon into muffin pan. Sprinkle little crumbled feta over batter and sprinkle origanum!
Bake @ 180 till golden brown! ENJOY! (SHIRIN AMEER)

Mini Rainbow Pavlovas

How awesome do these Mini Pavlovas look😍.  Spreading a little colour, is Sharona Dada, with these Rainbow Pavlovas. We love it. Thank you for sharing on this recipe💕

Mini Rainbow Pavlovas

Inspired by Donna Hays
Adapted by Sharona Dada

4 egg whites
1 cup (220g) caster (superfine) sugar
3 teaspoons cornflour (cornstarch)
1 teaspoon white vinegar
Gel food colours
whipped cream and fresh fruit, to serve

Preheat oven to 150°C (300°F).
Place the eggwhites in the bowl of an electric mixer and beat until soft peaks form. Gradually add the sugar, beating well until the mixture is glossy. Sift the cornflour over, add the vinegar and fold through.

Divide the meringue into 3 bowls and colour each one with a couple of drops of gel food colouring. Use a toothpick to add one drop at a time. Fold the colour in using a spatula.
Spoon the meringue into a piping bag and pipe as desired.

Place in the oven, reduce the heat to 120°C (250°F) and cook for 45 mins. Turn the oven off and allow the meringues to cool in the oven.
To serve, top with whipped cream and fresh fruit.

Crumbed Mushroom

A perfect Appetiser or a Side dish to any meal.  Crumbed Mushrooms is a definite winner.  And look at how delicious these look😍

Crumbed mushrooms..

1 punnet mushrooms... 
1 egg..
1/2 cup cake flour..
3/4 cup crumbs..
1 teaspoon aromat..
1/2 teaspoon salt..
1/2 teaspoon chicken spice..
1/2 teaspoon fine red chillies

1/2 teaspoon pepper.

 Wash and dry mushrooms..

Roll mushrooms in cake flour

..dip in egg..

mix all spices wth crumbs and dip mushrooms in crumbs.

I used cornflakes as crumbs..
Fry in hot oil for two min, serve with Tartar sauce

Tartar sauce
Half cup yogurt...2 Tablespoon mayo..1Tablespoon fine diced onion....parsly..salt



Fruit Punch

Summer weather calls for ice cold refreshments!!!  That is exactly what Rids had prepared for her family, with an abundance of Paw Paw (papaya) she gets from her tree in her garden, How Blessed, Masha Allah!

Fruit Punch

Add 1 paw paw + 5 TB tang orange juice to blender and liquidise
Grate 1 apple, 2 granadillas( use pulp of fresh granadilla)
Add 1 cubed kiwi
Add 1/2 cup halls passion fruit
Mix all together with lots of ice
Add fresh mint

Royal Cream Biscuits

With her twin boys busy with exams, Anisa ensures her cookie jars are always topped up.  Braving the sweltering weather recently in South Africa, she managed to make these treats for her boys.

ROYAL CREAM BISCUITS

Ingredients:
250g margarine (stork bake works well)
½ cup icing sugar sifted
½ tsp almond essence
2 cups cake flour sifted
½ cup corn flour sifted
Method:
Beat margarine and icing sugar until creamy.
Add essence and a little of the flour and maizena at a time until the dough is soft yet pliable.
Break into little walnut balls and shape into small rectangular pieces of about 3mm high.
Using a fork, make an indentation into the biscuit dough.
Bake in a pre-heated oven set at 160 degrees for approx 20/30 minutes until golden brown.
Remove from oven and cool for 45 minutes to an hour.
Prepare the icing while waiting for the biscuits to cool:
¼ block margarine
½ cup icing sugar sifted
½ tsp almond essence 
Beat until creamy.
Sandwich 2 biscuits and roll around in castor sugar.

Adega Style Chicken

Zeenat is one of Watalotwegot very 1st members, from years ago. She is a beautiful young lady who is mum to 2 adorable little daughters. I am sure she will be passing on all her culinary skills on to them.
In the meantime, we are so grateful to Zeenie, as she is affectionately known, who shares her skills with us all, THANK YOU ZEENIE.
How amazing does that chicken look in the pic.
   
Adega Chicken
(Zeenie _ Zeenat Langry - Watalotwegot)                    
Chicken disjointed, washed  and drained.                       
1 & half tsp Crushed Chillie
1/2 tsp Tumeric                  
2 tsp Adega Spice        
Some Egg yellow powder for colour
Generous squeeze of lemon       
Salt to taste
                            
To this add 1/3 Cup of Fresh Cream from 500ml Fresh cream
*balance you will keep for Sauce
2 Tablespoons Melted Butter
                     
~Marinate for about an hour.                                        
~Cook in a pot till chicken is done and Set aside.                 
In another pot prepare Sauce:            
Fresh cream that was left over from above 
1 Tablespoon of Fresh Lemon juice          
Dash of black pepper.            
1 Tablespoon of Adega Spice
              
•Bring to boil..it needs to be thick but a little runny, you can add a little Maziena to thicken
•Place chicken in casserole and pour sauce over.            
•Put in oven to grill till chicken is a little brown.
•Garnish with Chopped coriander and fresh green chillies.                  
•I serve this with pita, chips, green salad and veggies
