1/2 cup milk
125 sultanas or mixed fruit
Beat together the butter/margarine and sugar. Add the egg and vanilla extract and stir. Gradually add in the flour and baking powder alternating with the milk. Add the fruit. The mixture should be thick dropping consistency. Bake in a preheated oven at 180 degree Celsius for 20-25 minutes until golden brown and cooked through. It should have a crack through it, a must for me in a fruit cake!

Caramel cream: beat cream until soft peaks form, den add 2Tblsp of icing sugar and 1tsp maziena and beat until stiff( beat about a minute or less after maziena is added or until stiff, bt dnt over beat). Leave in the fridge for 1hour. Then add 1 tin of caramel to the cream and fold it in a few tyms, u want it swirled into the cream. Pipe onto cupcakes. Optional: Spoon a little caramel in the middle of the cream. I filled the cupcakes with a little caramel by filling a syringe wit caramel and inserting frm under the cupcake.
