DIY- FRESH TOMATO PUREE





Here is another DIY idea for you to try, whether you are just starting off in the kitchen or have many years of experience already.  The cost of many fresh produce, can at times sky rocket, today Bibi Ayesha shows us how to save some money, and buy tomatoes in bulk when it is much cheaper.  This DIY, Is how to make your own tomato puree at home, and you will always have enough of this 'must have' ingredient in your freezer, when the need arises.

DIY - HOW TO MAKE FRESH TOMATO PUREE
...for beginners
Sunnyside Classics by Bibi Ayesha Kadwa



Wash and drain red, ripe tomatoes 
Cut up and put into a big pot
Cook on high mixing at intervals 
Tomatoes release alot of water
When thick and mushy...it's ready
Leave to cool
Blend or liquidise properly
It you normally like to use a tin puree in your food
you can add some to this
Pour into containers..not too full 
Freeze and use as needed.

DIY- HOW TO MAKE YOUR OWN DHANA/JEERA POWDER

MAKING YOUR OWN BLENDS OF SPICES, THAT ARE USED ON A DAILY BASIS IN YOUR KITCHEN, GIVE YOU PEACE OF MIND OF EXACTLY WHAT GOES INTO IT.

FYI: "DHANA/JEERA" is actually CORIANDER AND CUMIN.

A DIY PICTORIAL FOR DHANA/JEERA POWDER


HOW TO MAKE YOU OWN DHANA/JEERA POWDER..
for beginners
Sunnyside Classics 
by Bibi Ayesha Kadwa
2 and half cups whole jeera(cumin seeds)
..cleaned and sun roasted or slight oven roasted

2 cups whole dhana(Whole Coriander Seeds) ..cleaned
Handful of black peppercorns
Grind in coffee grinder, to a fine powder form
READY TO BE FILLED AND STORED IN AIRTIGHT BOTTLES.

DIY- SAMOOSA PUR

What are Samoosa 'Pur' some may wonder... well these are Thin strips of pre-baked sheets, almost springroll sheet like, that are used for making samoosa.

Many of us South African Indians, have grown up with our elders making these Pur, and a lot of us like Bibi Ayesha Kadwa, have even mastered this technique.  So we were just chatting not long ago, and found there was a need to ' educate' the younger generation, not that Bibi Ayesha and I are that old now😜.  This is our attempt to help ladies, and some men too😋, realise that this once dreaded chore, is a lot more easier, and all thanks to technology that helps us make this so much more possible.

Today, we at Watalotwegot proudly present one of the very 1st DIY SAMOOSA PUR making techniques. The Step by Step Pictures in collage form is there as a guideline for you when you are practising this age old technique.  With just 9 Steps to follow, you won't be opting for store bought Pur again. 
We urge you to keep trying your hand at this, with the written step by step format, that relates to the picture collage below, helping guide you along.  If you feel this amount is a bit too much for you, try making half the batch.

DIY - Samoosa Pur by Bibi Ayesha Kadwa (Watalotwegot)

TO make the Pur Dough

You will need:
6 cups Flour.
A dash of vinegar
1 and half teaspoon salt and
+/- 3 Cups tap water to make a pliable dough..not soft.

Now follow these next steps with accordance to numbers as they appear in picture collage above.

Step 1. 
When dough is made, divide the dough into 30 to 33 smaller dough balls.

Step 2.
Roll 10 - 11 of these small balls into small disc shapes, and smear each disc with ghee/oil mix and sprinkle with flour.
☆[ For Smearing:- Use a mix of 1 and half cup ghee, heat slightly then mix in Half cup oil]

Step 3 and 4.
Stack these 10 - 11 discs on top of each other, always spreading ghee/oil mix on all sides, except the last one on top, which would not have oil spread on it at this stage. You are now ready to roll out this 1st stack of discs.
☆[ You will repeat this steps another 2 times as above to finish the amount of small dough balls]

Step 5. 
Keep rolling out the stacked discs to form a large thin 'roughly rectangular' shape.

Step 6.
Oil your baking sheet well, and The large rolled out stacked dough, should fit into your oven baking sheet, trim off ends to make it fit perfectly into the baking sheet. Now spread more of the ghee/oil mix onto the top sheet of rolled dough.

Step 7. 
Bake this at 180 degrees Celsius for 10 minutes rotating the tray halfway through baking. When it puffs up, remove from oven.

Step 8. 
Place the baked Large Rectangular Pur onto a clean cloth, and gently open up (separate) the layers of Pur, this is best done by separating one half side then the next. Lay out all the seperated Pur onto one other, and cut out strips down the shorter side of the large rectangle.

Step 9.
Your Samoosa Pur are all ready now, keep wrapped in a damp cloth or store well until you are ready to use with your favourite fillings.

Sugar Popcorn

"Sugar popcorn.. strawberry, bubblegum and peppermint an awesome combination". - as quoted by Jamilah, shukran for sharing your pic and recipe used for this sweet treat💕💕💕


Sugar Popcorn by Pebbles and Piggytails, which I made a small change to by adding flavouring.

2 cups unpopped popcorn seeds
1 1/2 cups white sugar
4 Tablespoon water
1 Tablespoon butter
Food colouring and flavour drop of your choice

Pop seeds according to your choosing, I used a large thick base pot with very little oil and popped one cup at a time. You can air pop or pop in microwave.

In a saucepan add the sugar, water, butter, colour and flavour. Bring to boil, while stirring constantly. As soon as it boils, pour it immediately over popped popcorn, stir it around until all the popcorn is covered. Let it stand for a few minutes. The popcorn does not stick together. Just shake it around if you find it sticking..

Now since I did different flavours and colours I used 1 cup of unpopped popcorn seeds for every colour, which means I halved the recipe.

Fruit Punch

Summer weather calls for ice cold refreshments!!!  That is exactly what Rids had prepared for her family, with an abundance of Paw Paw (papaya) she gets from her tree in her garden, How Blessed, Masha Allah!

Fruit Punch

Add 1 paw paw + 5 TB tang orange juice to blender and liquidise
Grate 1 apple, 2 granadillas( use pulp of fresh granadilla)
Add 1 cubed kiwi
Add 1/2 cup halls passion fruit
Mix all together with lots of ice
Add fresh mint

Enjoy!

Wasi's Creamy Cheesy Garlic Rolls





There are just some recipes, that never go out of fashion!!! Like this particular one shared on by Waseela 💕. Serve these rolls with Lunch,Dinner or a Braai/Barbecue, it's always a winner. I hope you give this one a try👍🏼


Wasi's Creamy Cheesy Garlic Rolls (Waseela Hossen)

~ 1/2cup basic white sauce seasoned
~ 3-4 Tblsp Lemon Butter Sauce~»heat 3Tblsp Fresh Cream with 1Tblsp butter and 2Tblsp Lemon Juice.
~Mix above together with a drop of yellow colour
~place 6 rolls of choice/1 long twisted roll onto greased casserole
~slice diagonally and add garlic butter between slices
~pour the above prepared sauce over, ensuring your fill some into the slices
~top with grated cheese
~place in oven until warmed through and cheese is melted

**Optional ~ add 3 Tblsp Steers Garlic Sauce to sauce mixture**

Mealie Cake

Mealie Cake (recipe shared by Zahira Salejee/ Pic shared by Rookayah Hassim)

250g Margarine
1 Cup White Sugar
3 Eggs
1 Cup Flour
1/2 Cup Dessicated Coconut
1 teaspoon vanilla essence
3 teaspoons (Heaped) Baking Powder
Pinch of Salt
3 Mealies, cut off the cob and Liquidized with ±1/2 cup Milk

Method:
~Cream Margarine and Sugar until creamy/fluffy
~Add Eggs one at a time and Beat well after each addition.
~Add Vanilla Essence
~followed by sifted Dry Ingredients
~add the coconut, followed by the mealie liquid
~Pour into Tray and bake at 180 degrees Celsius for 45-50 minutes.

Toasted Nuts and Seed Granola

TOASTED NUTS AND SEED GRANOLA:

1/4 cup honey
1/4 cup olive oil
1/4 cup brown sugar
Heat above on stove.

In large bowl mix together:
3 cups rolled oats
1/2 cup bran flakes
1/2 cup toasted coconut flakes
1/4 cup each of sesame seeds, sunflower seeds n pumpkin seeds
1 cup toasted mixed nuts of choice.
Mix above together then add in liquid mixture and stir to combine. 
Place on a large tray and toast at 150° for 20-30 mins or until golden brown.

Decorative Way to Serve Good Old Custard and Jelly

How to Set Jelly at an Angle

~Fill glass about half way up with prepared jelly.
~Use muffin tins to angle glass and support delicate glasses with kitchen towels, also helps with balancing it in the tins.
~Once is jelly set, Ensure custard is cooled well, before pouring into glass, else the jelly would begin to "melt",
~or if like me you in a hurry, use the store bought Boxed Custards😋.
~Keep Chilled and deco as desired.
