Bhinda - Okra/Ladies Finger

While typing out this post to share, I had done a tiny bit of research to find out more about Okra. The 1st thing that comes to mind about Okra is a slimy vegetable when cut into but Did You Know...
"The Okra Pods are among the very low calorie vegetables. They provide just 30 calories per 100 g besides containing no saturated fats or cholesterol. Nonetheless, they are rich sources of dietary fiber, minerals, and vitamins; often recommended by nutritionists in cholesterol controlling and weight reduction programs."

BHINDA WITH CASHEW NUTS

~ Wash and wipe with dry cloth n julienne  the bhinda.
~ Add salt and vinegar and soak for 10 minutes.
~ Heat a little oil in a pot and fry till all the stickiness is gone, approximately 20 mins.
~ Add cashew nuts and cook with the bhinda.
~ Add liquidized tomatoes & 1/4 cup tomato puree
~ Salt to taste
~ Chilli Powder to taste
~ 1/2 teaspoon Crushed jeera
~ 1/4 teaspoon turmeric pwd
~ 1 teaspoon garlic
* Cook till done.
~ Add fried onions from the top and serve.
